One of my favorite things about Christmas is the traditions. From decorating the tree to favorite Christmas Cookies to this Breakfast Casserole. Traditions make up Christmas! This Christmas Breakfast Casserole recipe is the perfect way to start the day on Christmas morning.

Christmas Breakfast Casserole Recipe

Assemble this casserole on Christmas Eve, place it in the fridge overnight and bake it while youโ€™re opening your gifts from Santa on Christmas morning! Itโ€™s easy to make, always delicious, and ready at just the right time!

I use sausage in this recipe, but you could use bacon, mushrooms, ham, or any other mix-ins you love. You could even mix it up and add a different cheese โ€“ Iโ€™ve used pepper jack and itโ€™s super good!

Ingredients

  • Crescent rolls โ€“ Full sheets of crescent roll dough also work in this recipe.
  • Sausage โ€“ This can be swapped with cubed leftover ham or cooked bacon if you prefer.
  • Frozen potatoes โ€“ I use the cubed style potatoes, but shredded will also work.
  • Shredded cheese โ€“ I like to use sharp cheddar cheese or Colby Jack cheese.
  • Cream or milk โ€“ I use half evaporated milk and half 2% or whole milk
  • Eggs

How To Make Christmas Breakfast Casserole

Step 1: Layer The Casserole: In the casserole dish, layer the sausage, potatoes, and cheese in that order.

Step 2: Add In The Eggs: In a large bowl, whisk together the eggs and cream or milk.

Step 3: Pour the mixture over the casserole and place it in the refrigerator. Let the mixture sit overnight.

Step 4: Let the casserole dish come to room temperature while you preheat the oven. Bake the casserole for about 45 minutes, or until the eggs are fully set in the center and the edges are golden brown.

Variations

  • Add some veggies. To bulk up your breakfast casserole, add sautรฉed onions, red and green bell peppers, mushrooms, or a combination.
  • Give it some Tex-Mex flair. Swap the sausage for chorizo, add sautรฉed onions and bell peppers, and serve your Christmas breakfast casserole with salsa, Cholula hot sauce, cilantro, thinly sliced green onions, etc.

Storage

You can wrap leftovers of this Christmas breakfast casserole in the baking dish or transfer them to an airtight container. Refrigerate for up to 4 days and reheat in the microwave or a 350ยบF oven.

Make-Ahead Instructions

This Christmas breakfast casserole recipe is ideal for making ahead. Assemble it, cover the baking dish with plastic wrap or aluminum foil, and refrigerate it overnight before baking.

Ingredients  

  • 1 pkg refrigerated crescent rolls
  • 1 lb browned sausage
  • 1 half package of Ore-Ida Oโ€™Brien frozen potatoes
  • 2 cups shredded cheese I like Cheddar or Colby-Jack
  • 2 cups cream or milk I use half evaporated milk and half 2% or whole milk
  • 6 eggs

Instructions 

  • Place crescent dough in bottom of greased 9ร—13 pan.
  • Layer sausage, potatoes & cheese in order given.
  • Mix eggs and cream together in large bowl. Pour over casserole.
  • Cover and refrigerate overnight.
  • Let rest on counter while oven preheats to 350 degrees. Bake uncovered for 45 minutes or until eggs are just set in center, being careful to not overbake. Let stand for 10 minutes before serving.
