At a first glance, it may look a bit strange to add dulce de leche to simple banana bread. However, you know how sweet and caramel alike is this milk jam and it really works with crepes, pancakes, waffles, brownies ( link ),turtle  cookies ( link ) or simple cookies. What exactly is dulce de leche?

Dulce de leche, which literally means “candy made from milk,” is a thick and sugary caramel-like sauce that’s made by slowly heating sweet milk.

There is another option to get your dose of dulce: you place your can of Nestle Sweetened Condensed Milk (395 grams) into a deep pot. I used an old fashioned spaghetti tall pot so it makes it easier to cover the can with 3 inches of water above the top. You bring water to boil, reduce to simmer for 2 hours and 40 minutes. That is, at least, what I’ve done. Take the can out and leave to cool completely before opening. I simply left it at room temperature overnight. By doing so, you can do any dessert you prefer.

Coconut flower sugar is a great substitute for white sugar because  it has low glycemic index ( 35 ) and its taste is lightly caramelized. It is obtained from carefully selected organically grown coconuts. It matches nicely with dulce de leche!

Ingredients

  • 2 bananas
  • 2 eggs
  • ½ tsp ground cinnamon
  • 1 Tbsp vanilla extract
  • 5 Tbsp dulce de leche
  • 1 cup all purpose flour
  • 1 ½ tsp baking powder
  • 2 Tbsp coconut flower sugar
  • 4 Tbsp vegetable oil + extra for the pan

Instructions

  1. Cover 7 x 3 inches loaf pan with parchment paper and slightly oil it. Leave aside.

  2. Preheat the oven to 180 C / 356 F.

  3. In medium sized bowl, mix ripe bananas and eggs. Slowly add the rest of ingredients to get smooth batter.

  4. Pour it in prepared bread pan and bake for 50 minutes or until toothpick inserted in the middle comes out clean.

Recipe Notes

Note: you may drizzle your loaf with dulce de leche before serving. Also, you may do the same with the slice of bread once served.
