Marinating your food longer doesn’t necessarily mean it’ll taste better. Make sure you know how long to marinate certain foods- cheeses, meats, vegetables, etc. Store bought Italian dressing makes a great simple marinade if you don’t have time to make your own.
I’ve also found that if you put the cream cheese in the freezer for 15 minute prior to cutting, it makes it so much easier to cut the cream cheese.

Step 1: Make the Marinade
Whisk together the marinade ingredients- Italian dressing, vegetable oil, vinegar, minced onion, water, and sugar.
Step 2: Cut Cheese Blocks
Cut Monterey Jack cheese in half lengthwise, then cut each half crosswise into 1/4-inch-thick slices. Repeat with cut cheddar cheese and cream cheese.
Step 3: Allow the Cheese to Sit and Marinate
Arrange cheese in 4 rows in a shallow baking dish, alternating Monterey Jack cheese, cheddar cheese, and cream cheese. Pour marinade over the cheese and toss to coat. Wrap and let the cheese to sit in the refrigerator at least 8 hours or overnight, so that the flavors of the marinade can soak through. The longer it marinates, the more flavorful it’ll be.

- ½ cup Vegetable Oil
- ¼ cup White Vinegar
- 2 tablespoons Onions, Minced
- 2 tablespoon Water
- 1 ½ teaspoon Sugar
- 8 ounces Monterey Jack Cheese, 1 block, chilled
- 8 ounces Cheddar Cheese, 1 block, chilled

- 4 ounces Pimentos, 1 jar, drained

Christina, just one note: if marinating for that length of time or longer, make sure to NOT use a metal baking dish… The acidic nature of vinegar/Italian dressing can react with &/or damage the pan & affect the flavor of the cheese.

I have made this recipe during the holiday’s for several years. To make it a little simpler you can substitute Italian dressing in the bottle vs. making your own. Also, I spread the spreadable cream cheese with onion and chives in between the two cheeses when layering on the platter. It is absolutely delicious and goes fast.
