Sweet and Spicy Asian Style Cauliflower

Happy Friday friends! I hope everyone is doing well. This week I wanted to come up with an Asian dish. I created a Sweet and Spicy Asian Style Cauliflower served with rice. This dish is packed with so much flavor. It has the perfect combination of sweet and spicy. If you are looking for a quick vegetarian meal, then look no further! This Asian style cauliflower dish is a lot healthier than your typical Chinese food takeout. My Asian style cauliflower will be your new favorite go-to meal!

Sweet and Spicy Asian Style Cauliflower

Serves: 2

Ingredients

1 head Cauliflower

1 cup cooked rice (I used basmati, but feel free to use jasmine or any other rice you prefer)

2-3 tablespoons soy sauce (you can use coconut aminos as a soy sauce substitute)

1 tablespoon sriracha sauce (add extra if you want a spicy kick)

1 tablespoon honey

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon ginger, finely chopped

1 teaspoon sesame oil

1-2 tablespoons oil

1 teaspoon cornstarch

Salt

Pepper

Sesame seeds for garnish (optional)

Scallions for garnish (optional)

Directions

Preheat oven to 400 degrees. Cook rice according to package and then set aside. Cut up cauliflower into medium size pieces. Place cauliflower pieces in a mixing bowl and add oil, salt, pepper, garlic powder and onion powder. Toss cauliflower until coated in mixture. Spray a baking sheet with cooking oil and arrange cauliflower. Bake for about 20-25 minutes or until cauliflower starts to get a slight brown color. While the cauliflower is cooking in the oven start making the sweet and spicy sauce. In a small bowl whisk together sesame oil, soy sauce (coconut aminos), honey, sriracha sauce, ginger, and cornstarch. In a small sauce pan over medium heat stir sweet and spicy sauce. Cook for about 5 minutes or until it starts to thicken up a little. Remove from heat and set aside. When cauliflower is done cooking, take it out of the oven and transfer to a mixing bowl. Pour the sweet and spicy sauce over the cauliflower and toss. Make sure cauliflower is coated well in mixture. To serve, place rice on the bottom of a bowl or a plate and add cauliflower on top. Sprinkle with sesame seeds or scallions (or both) as a garnish if you would like. Enjoy!
