Creamy Tomato Soup with Spinach and Tortellini

Happy Friday! I hope everyone is doing well. This week I created a delicious Creamy Tomato Soup with Spinach and Tortellini. There is something about a bowl of tomato soup that is so comforting and cozy. Adding spinach and tortellini to this soup really added extra flavor! This soup is loaded with tomatoes, shallots, garlic, spinach, basil and tortellini. Make a huge pot of this soup so you have plenty of leftovers! Have a great weekend!

Creamy Tomato Soup with Spinach and Tortellini

Serves: 4

Ingredients

1 large can San Marzano tomatoes

1 shallot, chopped

2 cloves garlic, chopped

1 bag fresh spinach

1 bag fresh cheese tortellini (frozen works too if you can’t find fresh)

Oil

Salt

Pinch crushed red pepper flakes

3 cups tomato sauce

1/4 cup heavy cream

1 tablespoon fresh basil (garnish)

Directions

Cook tortellini according to package. Add a little oil so they don’t stick, set aside. Heat oil in a large soup pot over medium-high heat. Add shallots and garlic and sauté for about one minute. Add tomatoes, tomato sauce, crushed red pepper flakes, and salt. Bring to a simmer, about 15-20 minutes. Add in cream and stir. Add spinach to pot and stir until wilted. To serve, add a handful of tortellini to a soup bowl. Pour tomato soup and garnish with fresh basil. Enjoy!
