Patty Melts with Special Sauce

These classic homemade patty melts are made with seasoned ground beef, caramelized onions , and swiss and cheddar cheese, grilled on sourdough bread.

How to prepare patty melts with special sauce

Ingredients:

  • Ground chuck
  • All-purpose seasoning
  • Worcestershire sauce
  • Unsalted butter
  • Yellow onion, diced
  • Salt and pepper to taste
  • Swiss cheese
  • Cheddar cheese
  • Sourdough or rye bread
  • Special Sauce
Special Sauce Ingredients
  • Mayo
  • Ketchup
  • Dijon mustard
  • Sea salt
  • Garlic powder
  • Honey
  • Dill pickle, chopped

Simple Steps

  • Prepare special Sauce – Preparing the special sauce first will give it time to sit, while you prepare everything else.
  • Season ground chuck with all- purpose seasoning and Worcestershire sauce, and form 4 equal sized balls.
  • Melt unsalted in a large skillet or griddle, and add the onions. Season with salt and pepper. Cook onions until caramelized and tender. Remove from skillet, set aside.
  • Melt unsalted butter in same skillet or griddle, and add beef balls. Press the balls into flattened patties. Cook for 3 minutes on each side.
  • Reduce heat. Scrape and wipe away as much black residue as possible. Melt butter and add two bread slices to the skillet. On one side, add 2 slices of swiss cheese, and 2 slices of cheddar cheese to the other. On one side, add the cook onions, a burger patty and a generous amount of the special sauce. Place other slice of bread with cheese, on top of slice with onions, patty and sauce. Cook on each side for 3 minutes, or until golden brown and cheese is melted.
  • Slice sandwiches in half and serve warm.

Tips and Substitutions

  • You can use an griddle in place of the skillet.  This will make the cooking process a little shorter because you can cook the onions while the patties are cooking.
  • Ground beef can be substituted for ground chuck.
  • Rye bread can be substituted for sourdough bread.
  • American cheese can be substituted for cheddar cheese.

Ingredients
  

  • 1 1/2 lb. ground chuck
  • 2 tsp. all-purpose seasoning I used Dano's, but your own can be created with salt pepper, garlic powder and onion powder.
  • 1 tbsp. Worcestershire sauce
  • 8 tbsp. unsalted butter
  • 1 yellow onion, diced
  • salt and pepper to taste
  • 8 slices swiss cheese
  • 8 slices cheddar cheese
  • 8 slices sourdough or rye bread

Special sauce

  • 3/4 cup mayo
  • 1 tbsp. ketchup
  • 2 tsp. Dijon mustard
  • 1/4 tsp. sea salt
  • 1/2 tsp. garlic powder
  • 1 tbsp. honey
  • 1/3 cup dill pickle, chopped

Instructions
 

  • In a small bowl, mix all ingredients for sauce together. Cover and refrigerate until ready to use.
  • Add ground chuck to a large mixing bowl. Season ground chuck with all purpose seasoning and Worcestershire sauce. Using your hands or a large spoon, mix all contents together thoroughly. Form 4 even sized balls and set aside.
  • Heat a large skillet over medium heat. Add 2 tablespoons of butter to the skillet. Once the butter is melted, add the onions. Season generously with salt and pepper. Continue to cook for about 10 – 15 minutes, or until onions are caramelized and tender. Remove from skillet, set aside.
  • In the same skillet, add 2 tablespoons of butter. Once melted, add two of the beef balls to the skillet. Take a spatula, and press until the balls are flattened. Cook for 3 minutes on each side, or until you have an internal temp of 160 degrees. Repeat this step with the other beef balls.
  • Reduce heat to medium-low. Scrape and wipe away any black residue from skillet. Add 1 tablespoon of butter. Once melted, add two bread slices to skillet. On one side, add 2 slices of swiss cheese, and 2 slices of cheddar cheese to the other. On one side, add the cook onions, a burger patty and a generous amount of the special sauce. Place other slice of bread with cheese, on top of slice with onions, patty and sauce. Cook sandwiches for 3 minutes on each side, or until golden brown and cheese is melted.
  • Slice patty melts in half, and serve warm.

Notes

  • An electric or cast iron griddle can be used as well.  This will make the cooking process a little shorter because you can cook the onions while the patties are cooking.
