  • 8 oz cream cheese room temperature
  • 3.4 oz instant banana pudding mix
  • 3 large eggs
  • optional vanilla wafers gluten free if needed

Instructions To Make Banana Pudding Brownies

Brownie Base:
  1. Preheat your oven to 325 degrees F. Line a 8×8 inch pan with foil or parchment paper and spray with nonstick cooking spray.
  2. In a microwave safe bowl, add your butter and sugar. Microwave for about 1 minute, or until the butter is melted. Whisk in the eggs, egg yolk, and vanilla. Stir in the oil and cocoa powder.
  3. With a rubber spatula, stir in your flour, baking soda, cornstarch, and salt until combined.
  4. Spread the brownie batter evenly into the prepared pan. 
  5. Bake for 15 minutes.
Banana Pudding Layer:
  1. While your brownie base is baking, add your cream cheese and banana pudding to a bowl and whisk together with an electric mixer until smooth and incorporated.
  2. Add your eggs one by one. After adding each egg, beat mixture on low speed until egg is just incorporated before adding next egg. Do not overmix.
  3. When your brownie is out of the oven, evenly spread your pudding mixture on top of brownie layer.
  4. If using, evenly place as many vanilla wafers as you would like on top of banana pudding layer.
  5. Return your baking dish to the oven. Bake for 20 minutes or until the banana pudding layer is only slightly jiggly.
  6. Remove from oven, allow to cool, slice and enjoy!
