Happy Friday foodie friends! I’m trying to hold onto this last month of summer for as long as possible! With that being said, I have a summer inspired salad I created this week. If you are a peach lover, then this salad is for you! My delicious and easy peach salad is packed with so many amazing flavors! From the peppery arugula, creamy burrata, salty prosciutto, juicy peaches, and the sweet and tangy balsamic vinegar. Mare’s Summer Peach Salad

Serves: 2

Ingredients

1 container arugula and spinach

1 small container burrata

2 peaches, sliced

3 pieces prosciutto, torn into pieces and fryed

Olive oil

Balsamic vinegar

Directions

Place arugula and spinach mixture in a salad bowl. Take sliced peaches and place them in a circular motion on top of greens. Take burrata out of container and lightly pat it dry. Try not to break burrata when patting it dry. Put burrata in the middle of the salad. Crumble up prosciutto and sprinkle all around salad. Lastly, drizzle olive oil and balsamic vinegar over salad. Serve and enjoy!
