I’ve paired fresh black trumpet mushrooms with a combination of other dried mushrooms because using horn of plenty mushrooms alone can have a strong aftertaste. However, if you have dried horn of plenty mushrooms, feel free to use them exclusively, as their aftertaste disappears when dried.
I’ve chosen a blend of: dried porcini mushrooms (Boletus edulis) to provide a rich umami essence, while dried yellow foot mushrooms (Craterellus lutescens) are adding a subtle nutty note. This combination results in an exceptional pasta dish that brings the wonders of nature to your plate.

Amazing Black Trumpet Pasta uses a combination of mushrooms, dried porcini mushrooms and dried yellow foot mushrooms, with an emphasis on fresh black trumpet mushrooms.

Ingredients

  • 30g butter

  • 1 cup dried yellow foot mushrooms (Craterellus lutescens)

  • 1/2 tsp dried porcini mushroom powder (Boletus edulis)

  • 150g fresh Horn of Plenty mushrooms (Craterellus cornucopioides)

  • 1 onion

  • 2 cloves of garlic

  • 2.5 dcl heavy cream

  • 2 dcl warm water to soak and later add to the sauce

Directions

  • First, take a Bowl for Soaking Dried Mushrooms and add the dried yellow foot mushrooms. Also add half a teaspoon of dried porcini mushroom powder. Now pour about 2 dcl of warm water over the dried mushrooms and leave to soak for at least 15-20 minutes.
    When they’re all plump and rehydrated, drain them, but don’t throw away that precious mushroom-soaked water – it’s like liquid gold for your dish!

  • While the dried mushrooms are plumping up, take the fresh Horn of Plenty mushrooms and give them a good clean. See below the recipe for how to clean the mushrooms.. When they’re looking their best, slice them. These mushrooms are the real stars of our show, so let’s give them the spotlight they deserve.
  • Now it’s time to fire up your Frying Pan . Pour in the 30g of butter and let it melt into a warm and welcoming pool. Add the finely chopped onion and let it sizzle until it turns a beautiful golden colour.
  • Now add the drained dried mushrooms, the garlic and our fresh horn of plenty mushrooms. Let them all hang out together for about 3 minutes.
  • Pour the saved mushroom-soaked water over the mixture and let it simmer until it’s almost gone. We want to use all the flavour we can get.
  • Now add the heavy cream and let everything simmer together. Don’t rush this step; let the flavours mingle in the pan and create a thicker sauce.
  • While the sauce is doing its thing, cook your favourite pasta according to the instructions on the packet. Or, if you’re feeling extra fancy and have made your own homemade pasta (kudos to you!), that’s perfect too. Think fettuccine or pappardelle for a touch of luxury.
  • Once your pasta is cooked to perfection, drain it and toss it lovingly into the mushroom sauce.Leave everything in the pan for a minute or two to allow the flavour to mingle.
  • Sprinkle some grated Parmesan on top for an extra layer of flavour.
  • And if you happen to have some fresh parsley, it’s a lovely garnish, although I totally understand if you decide to leave it out.
  • Now plate it up and enjoy every delicious bite of this mushroom masterpiece!

You can choose to use only dried Horn of Plenty mushrooms instead of fresh. Simply soak the dried mushrooms for 15-20 minutes. Proceed with the recipe as usual, following the steps above. This variation adds a concentrated and rich mushroom flavor to the dish and makes a delicious alternative to the original recipe.

The black trumpet mushrooms (lat. Craterellus cornucopioides) is shaped like a horn or trumpet. Shape is similar to the traditional ‘Horn of Plenty’ symbol – a horn overflowing with abundance. This similarity in shape probably contributed to the common name of the mushroom.

These mushrooms grow in rich deciduous woods, especially under beech trees. They can be difficult to find because their colour blends in with the forest floor. Their natural occurrence is in keeping with the symbolism of abundance and bounty associated with the “horn of plenty” or “cornucopia”.

The Greeks had a fascinating story about the “Horn of Plenty”, which originally came from a magical she-goat called Amalthea. Legend has it that Cronus, the father of the great god Zeus, hid him when he was a baby. He hid him on an island called Crete.

During this time, Amalthea, who could be a water nymph or a goat, cared for Zeus. The story goes that while Zeus was feeding on her, he accidentally broke off her horn. An endless supply of food flowed from it. The horn became a symbol of abundance.

The Romans had their own version of the story. In a poem called “Metamorphoses” by Ovid, Hercules played a central role. Hercules met a river god called Achelous, who was missing one of his horns after a fight with Hercules. Nymphs filled this horn with the finest autumn fruits, turning it into a sacred symbol of abundance.

Gods such as Demeter, who oversaw the harvest, and Dionysus, the god of celebration, were closely associated with the symbol.

Lesser gods associated with happiness and wealth also embraced it. The horn, symbol of fertility, appeared in art and was transformed from a real horn into a horn-shaped basket. It became a symbol of the harvest season and a common sight at harvest festivals.
