I can totally relate to trying to get picky eaters to eat their vegetables! It’s a constant battle in many homes, especially when those opinionated teenagers start dictating what passes their lips. But don’t worry – we parents have a few tricks up our sleeve!
In my kitchen, I have a top secret weapon for sneaking vegetables into meals: zucchini patties! My kids call them “super yummy zucchini burgers”, even though they contain that “super disgusting” zucchini. Funny how they hate zucchini on its own, but stack it between buns with fixings and suddenly it’s a delicious work of art!

These clever zucchini patties effortlessly combine healthy zucchini with an explosion of flavours and textures, making every bite an exciting adventure. It’s living proof that a dash of creativity can turn even the pickiest eaters into veggie-loving fiends.

Ingredients

  • 2 medium zucchini or one large zucchini

  • 1 egg

  • 1/2 cup grated Edamer or similar cheese (you can use other cheeses such as cheddar or mozzarella if you prefer, or even better, a combination of these with grated Parmesan)

  • 1/2 cup gluten free breadcrumbs (plus extra for coating)

  • Salt, to taste

  • Olive oil, for frying

Directions

  • Wash and dry the zucchini.
  • Trim the ends and grate the zucchini using a grater or food processor. Sprinkle with salt to taste and leave to stand for about 10-15 minutes. This will allow them to release any excess moisture. Squeeze out as much moisture as possible with a clean tea towel or cheesecloth. This step is essential to prevent your patties from being too wet.
  • In a large mixing bowl, combine the mashed zucchini, grated cheese, egg and half cup breadcrumbs. Be careful with the breadcrumbs; add them gradually until the mixture forms easily into patties. The amount of breadcrumbs needed will depend on the size of your zucchini and how moist they are after being squeezed.
  • Add salt to taste, bearing in mind that the cheese and breadcrumbs may already contain some salt. Start with a small amount and adjust to taste. No additional seasoning is necessary as this simple recipe allows for different serving options and condiments.
  • Divide the mixture into equal portions and form patties. If the mixture is too moist and difficult to shape, add a little more breadcrumbs to help bind it together.
  • (Optional)Place some extra breadcrumbs on a plate.
  • (Optional)Gently press each zucchini patty into the breadcrumbs to coat both sides evenly. This will give the patties a crispy exterior when cooked.
  • Heat a few tablespoons of olive oil in a large frying pan over a medium heat.
  • When the oil is hot, add the zucchini patties to the pan, taking care not to overcrowd. You may need to cook them in batches.
  • Fry the patties for about 3-4minutes on each side or until golden brown and crisp.
  • Remove the cooked patties from the pan and place on a plate lined with kitchen paper to absorb any excess oil.
  • Serve the courgette patties hot as a starter, side dish or even in a burger bun as a vegetarian zucchini burger. They are delicious on their own or with a dipping sauce of your choice, such as tzatziki or sour cream.

  • Make sure the oil is hot enough before adding the patties to the pan. This will help them develop a crisper exterior while remaining tender on the inside.
