Growing up, one of my family’s go-to summer dinners was grilled chicken and vegetables. Unsurprisingly, I usually ate one or two pieces of squash and then picked around the rest of the veggies to make it look like I was eating them. Fast forward 15 years, and after some experimentation I’ve finally found a vegetable side dish I can get behind!

This sautéed summer squash and tomatoes is an easy vegetable side dish you can cook in under 10 minutes. It goes great with some grilled chicken and potatoes, or fish if that’s your preferred protein. Made with zucchini, vine tomatoes, and a little lemon, this recipe is fresh, light, and simply delicious for summer.

Summer Squash and Tomato Side Dish Ingredients

Here’s what ingredients you’ll need to make this simple vegetable side dish for summer:

  • Olive oil
  • Minced garlic
  • Zucchini squash
  • Vine tomatoes
  • Salt
  • Lemon juice

How To Make Summer Squash & Tomatoes

This summer side dish is an easy recipe you can throw together on the stove in under 10 minutes. Here’s a step-by-step guide to making our summer squash and tomato recipe:

  1. Heat the oil and minced garlic in a frying pan over medium heat. Cook until the garlic is fragrant, about 1 minute or so.
  2. Next, add the sliced zucchini to the pan. Season with a pinch of salt, and saute until slightly softened, about 5 minutes.
  3. Then, add the diced tomatoes and another pinch of salt. Stir to combine and lower the heat to medium-low. Cook until the tomato juices begin to come out, about 1 to 2 minutes.
  4. Finally, remove from heat and stir in the lemon juice. Adjust salt to taste and serve immediately.

Don’t be afraid of adding salt to these veggies! It brings out a ton of flavor in this simple side dish and can easily be counteracted with extra lemon juice in case you add too much.

Ingredients

  • 1 tbsp olive oil
  • ½ tsp minced garlic
  • 1 medium zucchini squash sliced thin
  • 2 medium vine tomatoes diced
  • 2 pinches salt
  • ¼ lemon juiced

Instructions

  • First, add the olive oil and garlic to a frying pan and cook over medium heat until fragrant, about 1 minute or so.
  • Next, add the zucchini squash and a pinch of salt. Sauté until slightly softened, about 5 minutes.

Notes

Seasoning with salt: Don’t be afraid to use salt in this recipe! It brings out a ton of flavor in these two simple veggies. Adjust at the end of cooking as needed – and if you’ve accidentally added too much salt, use a little extra lemon juice to offset it.
