Celery also brings a bit of texture, while carrots and peas add a subtle element of sweetness. Frozen peas (thawed before adding to the dish) work and taste great. -- We recommend using fresh carrots for their flavor and texture, rather than frozen.

  • Onion & garlic - The aromatics elements that create the dish's flavor base. Use fresh garlic cloves, rather than powdered or granulated garlic, for the best flavor.

  • Chicken broth + whole milk - Creates the base of the dish's chicken pot pie sauce. Chicken broth adds richness and flavor, while whole milk creates the sauce's creaminess. We recommend sticking with whole milk for the best texture. -- Skim and 2% milk just won't thicken up in quite the same way.

To get a pan going, first start cooking some egg noodles in a large pot of salted boiling water according to their package directions.

Ingredients

  • 3 c. dry egg noodles
  • 4 T. unsalted butter
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely minced
  • 2 medium carrots, peeled & diced
  • 1 stalk celery, sliced
  • 3/4 c. frozen peas, thawed
  • 3 T. all-purpose flour
  • 1 c. chicken broth
  • 1 1/4 c. whole milk
  • 1 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. dried thyme
  • 1/4 tsp. dried sage
  • 2 to 3 c. fully cooked chopped or shredded chicken

Instructions

  1. In a large pot of salted boiling water, cook egg noodles according to package directions. Drain.
  2. While noodles cook, melt butter in a large skillet over medium heat. Add onion, garlic, carrots, and celery. Saute gently for 8-10 minutes until tender and onions are translucent.
  3. Add flour to skillet and stir into vegetables.
  4. Gradually whisk in chicken broth and whole milk. Add salt, pepper, dried thyme, dried sage, and thawed peas. Bring to a simmer and cook 3-4 minutes, stirring very frequently, until sauce thickens.
  5. Stir in cooked chicken and noodles; cook until heated through.
  6. Adjust salt and pepper, if needed, to taste.
