Ingredient Notes

  • Smoked Sausage: Use your favorite smoked sausage/Kielbasa. For this recipe I used Hillshire Farms Beef Smoked Sausage. You could also use pork sausage or turkey sausage.
  • Gnocchi: Try Rana brand skilled gnocchi or any potato gnocchi will work.
  • Cherry Tomatoes
  • Broccoli Florets: You can use fresh or frozen florets for this recipe.
  • Red Pepper: Use a medium to large pepper.
  • Yellow Pepper: You should use a medium to large pepper.
  • Red Onion: Using red onion will give a slightly spicer, yet mild flavor compare to a white or yellow onion, but you can use what you’d like.
  • Italian Dressing: Regular or lite dressing as the oil helps to coat the vegetables and gnocchi allowing them to brown.
  • Parmesan: Pre shredded parmesan to taste but you can also use freshly grated you could also use shredded mozzarella cheese as well.

STEP 1: CHOP UP VEGGIES

Cut up all of the vegetables and sausage. Then add veggies, sausage, and gnocchi to a large bowl along with Italian dressing and mix until everything is coated evenly.

STEP 2: ADD TO BAKING SHEET

Add sausage mixture to a parchment paper lined baking sheet. Then bake for 15-20 minutes, taking out and mixing around the gnocchi and sausage, then put bake into the oven for another 10 minutes.

STEP 3: TOP WITH CHEESE

Remove from oven and evenly top with shredded parmesan. Then this dish is ready to serve! You can also serve this with tomato sauce, fresh herbs such as fresh basil, and red pepper flakes, salt and pepper to taste.

To prepare this recipe ahead of time you can chop up all of the veggies ahead of time and then add to sheet pan when you are ready to cook. Yes, this gnocchi with sausage recipe is perfect for prepping. Cut and chop all the vegetables (red/yellow peppers, onion and broccoli) and sausage. Place in a container with an airtight cover (helps to keep your refrigerator from smelling like onions) or a storage bag and store it in the refrigerator up to 3 days before using in the recipe. When it comes time to cook mix with the gnocchi, cherry tomatoes and Italian dressing. Bake according to the directions.

CAN I USE ANOTHER TYPE OF SAUSAGE IN THIS RECIPE?

Sure, you can easily swap out smoked sausage with any type of sausage (Italian, chicken, kielbasa, etc). If you prefer you can use a plant based sausage such as Beyond Sausage or Field Roast sausage. You can even leave out the sausage for a vegetarian dish. Make this more filling by doubling up on the gnocchi.

WHAT IF I DON’T LIKE THESE VEGETABLES? CAN I USE SOMETHING ELSE?

If you don’t like some of the vegetables in this Italian sausage gnocchi recipe you can swap them out with something you would enjoy more. Chop vegetables such as potato, sweet potato or any type of firm squash (butternut, acorn, etc) into cubes about 1 inch in size to allow them to cook evenly.

Ingredients

  • 16 ounces smoked sausage, sliced into rounds
  • 12 ounces Ready-made gnocchi
  • Pint of cherry tomatoes
  • 2 cups fresh broccoli florets
  • 1 red pepper, seeded and cut into 1-inch chunks
  • 1 yellow pepper, seeded and cut into 1-inch chunks
  • 1 medium red onion, cut into eighths
  • ½ cup Italian dressing
  • ½ cup shredded parmesan cheese

Instructions

Directions:

  • Preheat the oven to 400 degrees
  • Spray baking 2 baking sheets with non-stick spray or line with parchment paper
  • In a large bowl mix together the smoked sausage, gnocchi, tomatoes, broccoli florets, red pepper, yellow pepper and red onion.
  • Pour Italian dressing over mixture in bowl.
  • Spread evenly over the baking sheets
  • Bake 15 to 20 minutes.
  • Remove from the oven, stir, spread out evenly and return to the baking sheets to the oven to bake another 10 minutes or until the vegetables are tender.
  • Remove from oven and divide shredded parmesan cheese over the top.

Air Fryer Directions:

  • Follow the directions for making the gnocchi and sausage (steps 1 through 4). Continue with the directions below for making this recipe in the air fryer.
  • Preheat your air fryer according to the manufacturer’s directions.
  • Place half of the gnocchi mixture (see air fryer note below) into the air fryer basket. Spread out in an even later.
  • Cook in the air fryer at 375 degrees for 12 minutes.
  • Remove the cooked gnocchi and sausage from the air fryer basket and repeat the process with the remaining mixture.
  • Diving the shredded parmesan cheese over the top.
  • Serve and enjoy!
