Growing up, I just loved my Mom's 3-Bean Salad. With its tender beans and marinated goodness, it just did not disappoint. And you know what? -- This 9-bean version does not disappoint either!

Marinated 9-Bean Salad is like the classic 3-bean version on steroids. It takes a combination of 9 different types of beans with a similar vinegar and sugar-based marinade to the classic, and adds in red onion, red bell pepper, cherry tomatoes, and a dose of fresh parsley for good measure. And let me just say, all that stuff comes together to deliver up fabulous flavor in every bite.

Marinated 9-Bean Salad Ingredients:

Marinated 9-Bean Salad is made up of the salad's bean mixture itself and its tasty marinade dressing. If any of its 9 bean varieties are not to your liking, simply substitute an additional can of one of its other 8 types or a completely different canned bean option of your choosing.

For the canned 9-bean mixture, you'll need:

  1. Light red kidney beans
  2. Dark red kidney beans
  3. Pinto beans
  4. Cut green beans
  5. Yellow wax beans
  6. Lima beans (or giant lima beans)
  7. Great Northern beans
  8. Black beans
  9. Garbanzo beans (aka: chickpeas)

In addition to the canned beans, you'll need:

  • Red onion - Seasons and amps up the flavor of the salad. We like the flavor red onion brings, however Vidalia or another mild, sweet onion can be used instead.

  • Celery - Brings a nice and needed textural crunch to the salad.

  • Red bell pepper - Also contributes crunch, as well as flavor, to the salad. We do not recommend substituting green bell pepper as green pepper's flavor tends to be harsher and more dominant than red's.

  • Cherry tomatoes - Brings a flavorful fresh element to the salad. Halve the cherry tomatoes so they absorb the flavor of the marinade, which doesn't happen if they're left whole.

For the salad's marinade, you'll need:

  • White vinegar - Forms the base of the marinade, and gives the salad its characteristic tangy taste.

  • Extra-virgin olive oil - We prefer the flavor of olive oil, however canola or vegetable oil can be substituted, if you'd like.

  • Granulated sugar - Sweetens the marinade dressing, and helps create the marinated bean salad's signature flavor. Part of the sugar can be replaced with Splenda, if you'd like, though we recommend keeping at least some of the called-for amount of granulated sugar for the best flavor.

  • Salt & pepper - Key in seasoning the salad's beans and enhancing the finished salad's flavor. After marinating, taste the 9-Bean Salad and add additional salt and pepper, if needed to-taste.

  • Dried oregano - Lends an earthy background note to the salad. If you're not a fan of oregano, the salad is still tasty without it. -- So the oregano can be omitted if you prefer.

  • Fresh parsley - Adds freshness, flavor, and flecks of color to the marinated bean salad. In a pinch, dried parsley can be substituted but we highly recommend sticking with fresh. Dried parsley just doesn't "play" the same way in the finished salad.

How to Make Marinated 9-Bean Salad:

Whipping up a big bowlful of Marinated 9-Bean Salad is really easy. -- A little can opening, some chopping, and a bit of stirring is all this flavorful salad takes.

To get a batch started, first drain and rinse all the canned beans and place them in a large bowl. Then add in diced celery, chopped red onion, red bell pepper, and halved cherry tomatoes. Stir the mixture gently to combine.

Next make the marinade dressing by combining some sugar, vinegar, and water in a bowl. Whisk this together until everything's well combined and the sugar is fully dissolved. Whisk in some olive oil, salt, pepper, dried oregano, and chopped fresh parsley.

Pour the marinade dressing over the bean mixture and stir gently to get everything coated. Then cover and refrigerate the salad overnight, stirring occasionally, to allow the beans to marinate and the flavors to meld. 

After marinating, taste the bean salad and adjust the salt and pepper if needed, to taste. Then you're good to go with enjoying the bean salad deliciousness!

Ingredients

For the bean mixture:
  • 1 (15.5 oz.) can light red kidney beans
  • 1 (15.5 oz.) can dark red kidney beans

  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. dried oregano
  • 1/4 to 1/2 c. chopped fresh parsley

Instructions

Prepare bean mixture:

  3. After marinating, taste the bean salad and adjust salt and pepper if needed, to taste.
