Since pancakes are defined as „bread“ ( flat type ) because of same basic ingredients and dozens of millions recipes to be found on internet, we decided to come up with our version. Blueberry pancake bread is our healthy breakfast. From scratch, not pancake mix.

This loaf is the best to enjoy in two days but it lasts longer if you warm a slice in microwave before serving and this way you can enjoy it for four up to five days if you store it in the fridge, wrapped tightly.

What to eat with this pancake bread recipe ?

Extra honey and sliced roasted almonds are our first choice. You may also add some whipped cream, maple syrup, any fruit you like, jams, Nutella, grated fresh citrus zest, cream cheese or simply dust with some icing sugar.

We don’t wait until this pancake bread cools completely. We love it warm with all it’s flavours releasing.

When we make a new dish for us, we talk about who might have invented it.

To our surprise, Romans invented pancakes. Since Rome’s records were destroyed in 390 BC when the city was sacked by barbarians, it is impossible to know for certain how many kings  actually ruled the city, or if any of the deeds attributed to the individual kings, by later writers, are accurate but I would say Early Roman Kings enjoyed them since most food historians say that the earliest pancake-like dish, known as Alita Dolcia (“another sweet” in Latin), was made by Romans in the 1st century CE from milk, flour, egg, and spices. Once you decide to make this great blueberry recipe pancakes, feel free to be creative. You may add some extra vanilla extract, cinnamon, lemon or orange zest or hazelnuts instead of almonds. Chocolate chips are also great to add instead of blueberries.

 

Personally, whenever I make pancakes or crepes or pancake bread I stick to all-purpose flour. It gives the best results.

Ingredients

  • Ingredients for the bread :
  • 2 cups all purpose flour
  • 1 ½ tsp baking powder
  • Pinch of salt
  • 7 Tbsp butter, room temperature
  • ½ cup sugar
  • 1 Tbsp vanilla extract
  • 2 eggs
  • 3 drops almond extract
  • 1 Tbsp lemon zest
  • 2 Tbsp honey
  • 1/3 cup + 4 Tbsp warm milk
  • 3 Tbsp almond slices
  • 1 cup fresh blueberries
  • Ingredients for the streusel :
  • 5 Tbsp all purpose flour
  • 3 Tbsp sugar
  • 1 tsp cinnamon powder
  • 3 Tbsp butter
  • 2 Tbsp sliced almonds

Instructions

  1. Preheat the oven to 160 C / 320 F.

  2. Cover 4.5 x 10 inches loaf pan with baking paper, grease and leave aside.

  3. Combine flour, baking powder and salt in one medium sized bowl,and leave aside.

  4.  In another medium side bowl, mix eggs and butter until fluffy.

  5. Add sugar, vanilla extract, almond extract, lemon zest, honey and milk to eggs mixture and mix well.

  6. Slowly add flour mixture until well combined.

  7. Gently fold almond slices and blueberries into the batter, using spatula.

  8. Pour batter into a bread dish and bake at 160 C / 320 F for 30minutes.

  9. Meanwhile, prepare streusel in a small bowl, using hands, to .

  10. After 30 minutes of baking, take the dish out and quickly sprinkle streusel over the top of the bread.

  11. Continue baking for 35 minutes or until toothpick inserted in the middle comes out clean.

  12. Leave in the dish for 30 minutes, at room temperature, take out ofthe dish, serve bread slices while still a bit warm.
