Ingredients

For the Salad:

  • 1 can chickpeas, rinsed and drained
  • 12-15 cherry tomatoes
  • 2 medium cucumbers
  • 1 red onion
  • 1 bell pepper
  • a handful of parsley
  • a handful of spinach

For the Dressing:

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup (or honey)
  • 1 clove garlic, minced
  • 1 tbsp nutritional yeast
  • salt and pepper to taste

Instructions

  1. Rinse and drain the canned chickpeas.
  2. Cut cherry tomatoes into halves. Chop the cucumbers, onion, bell pepper, and parsley.

  4. In a small bowl mix all ingredients for the dressing until well combined.
