What are vegan protein cookies made of?

  • Protein powder: This makes the cookies high protein and gives them a rich chocolate flavor. Try it with any plant-based or whey protein. I use and recommend the Naked Nutrition brand for this recipe!
  • Almond butter: Although I suggest almond butter, you can also make them with peanut butter or cashew butter. For a nut-free option, try sunflower seed butter instead.
  • Almond flour: This “flour” is made from blanched ground almonds. It is naturally gluten-free.
  • Coconut sugar: This sweetener is considered refined sugar-free, which makes it a healthier option compared to regular sugar.
  • Cocoa powder: Cocoa creates a rich chocolate flavor. For an even healthier option, you can use raw cacao powder instead.
  • Mashed banana: This ingredient naturally sweetens the cookies and acts as an egg replacer. Applesauce works as well.
  • Coconut oil: Use unrefined or refined coconut oil. The refined variety is flavorless and odorless, while the unrefined kind has a coconut flavor.
  • Chocolate chips: Use your favorite chocolate chips, whether a dark or milk variety.

How to make protein powder cookies

First, preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.

Next, add all ingredients (except for chocolate chips) in a large bowl. This includes almond butter, almond flour, protein powder, coconut sugar, mashed banana, cocoa powder, melted coconut oil, vanilla extract, baking powder, and salt.

Mix the ingredients together until evenly combined. Then, stir in the chocolate chips.

After, scoop the cookie dough into balls. Using clean hands, flatten and form into round cookies. Press extra chocolate chips on top (optional).

Finally, bake the cookies for 15-20 minutes. Remove from the oven and let cool on the baking sheet for 5 minutes. Sprinkle flaky sea salt on top (optional but recommended). Enjoy!
