Spanish Sunday Cake | The EASIEST & Most DELICIOUS Cake EVER

This Spanish Sunday Cake, known as Torta Dominguera, is filled with honest & clean flavors, it´s seriously easy to make and all done in about 45 minutes. Serve it next to a cup of hot chocolate or even coffee and tea for a taste of Spanish goodness.

Spanish Sunday Cake
This recipe hails from the province of Jaen in the region of Andalucía, and it´s a cake that most Spaniards enjoyed as a child for Merienda (afternoon snack) and still enjoy as an adult because it is so good.

Spanish Sunday Cake
To make this cake I used an electric hand mixer and a round baking pan. You can also use a square or even rectangle baking pan if you like. If you don´t have an electric mixer, you can just use a manual whisk.

TIPS & TRICKS
to Make this Recipe: It took me 35 minutes to perfectly bake this cake. Of course, every oven heats differently. So it make take you 5 minutes less or five minutes more. Just pierce the middle of the cake with a toothpick, if it comes out cleanly the cake is ready.

Ingredients

  • 4 eggs
  • 1 cup granulated sugar 200 grams
  • 1/2 cup plain Greek yogurt 125 grams
  • 1/2 cup sunflower oil 115 ml
  • 1 lemon
  • 1 tbsp baking powder 14 grams
  • 1 1/2 cups all purpose flour 180 grams

EXTRAS

  • granulated sugar for sprinkling
  • nonstick cooking spray

Instructions

  1. Crack the eggs into a large bowl and add in the sugar, using an electric hand mixer, mix the ingredients until they´re light and creamy, about 1 to 2 minutes

  2. Then add in the Greek yogurt and mix for another 30 seconds

  3. Add in the sunflower oil and finely grate the zest of 1 lemon, avoiding the white pith, mix for another 30 seconds

  4. Add in the baking powder, swap out the electric mixer for a hand held whisk, mix together

  5. Then add in the flour in 1/2 cup (60 grams) increments, run it through a fine sieve as you add into the mixture, then whisk until well mixed

  6. Once all the flour has been added and you´ve ended up with a thick and creamy texture the batter is done

  7. Line a round or square baking pan with parchment paper (mine was 8 inches / 24 cm in diameter) and spray the sides with nonstick cooking spray, add the cake batter into the baking pan, making sure it´s evenly spread out

  8. Add into a preheated oven, bake and broil option (bottom + top heat), 180 C - 355 F

**bake + broil option is similar to the bake option with the fan on**

  9. After 35 minutes and the cake is golden brown it should be cooked through, you can always pierce the middle of the cake with a toothpick, if it comes out cleanly it is ready, remove from the oven and sprinkle with granulated sugar on top while it´s still hot, let it sit until it cools

  10. Once the cake is cool enough to handle, gently remove from the baking pan and serve, enjoy!

Is it lacking Salt deliberately? I though it might be a mistake, so I added 1/4 teaspoon to mine.

It does not contain salt as the Greek yogurt does contain some sodium, but you can add some as you did if you like 🙂
