Our parents make delicious one-pot meals, especially Slovenian one-pot wonders. We already shared two popular recipes, Boranja (Pork and Beans) and Jota (Pork, Sauerkraut, Potatoes, and Beans). Today we’re excited to add another one to the collection called Segedin (Pork and Sauerkraut). All these recipes are hearty, comforting, and incredibly delicious. There are many variations, but this recipe has always been our go-to. Feel free to store any leftovers in the fridge or keep them in the freezer for several months. That way, you can always have a delicious home-cooked meal at hand.

Delicious one-pot goulash for cold days

Segedin is a delicious Hungarian Goulash that is very popular in Slovenia too. This pork stew cooked with sauerkraut is regularly on the menu during wintertime in our home. These are the top reasons why you should give it a try:

What to serve with Segedin

Feel free to serve Segedin on its own, with a spoon of sour cream, or choose any of the following side dishes:

Storing and freezing

Storing Segedin is quick and straightforward. Feel free to store it in two ways.

Place the Segedin into an airtight container. Keep in the fridge for up to 4 days. Reheat well before serving.

Freeze the Segedin. Place them in an airtight container or freezer bag and place it in the freezer for up to 2 months. Before serving, defrost and reheat well in the microwave or stove.

METHOD

  • prepare the meat and spices

    Place a large pot (with a lid) over medium heat. Add lard or oil and diced onion. Pan fry for 6 - 8 minutes. Cut the meat into small pieces (approx. 1 cm or 1/2 inch). Add the bay leaves and meat to the onion and pan-fry on high heat for about 5 minutes or until golden brown. Add diced garlic, paprika powder, caraway powder, salt, and pepper. Optionally add the tomato paste and cook for a minute.

    Add sauerkraut to the meat. Add the water or stock and bring it to a boil. Cover with a lid, reduce the heat to medium-low, and simmer for 1 hour.

    Remove the bay leaves before serving. Divide the Segedin between six plates. Add the sour cream on top, and serve with your favorite side dish.
