Crunchy Bok Choy Salad with Peanut Dressing

This Crunchy Bok Choy Salad with Peanut Dressing is a go-to salad of mine when I’m looking for bold flavors but something light, green, and crunchy! I’ve been finding more interest in eating salads as the weather has gotten a bit warmer in our area. All of a sudden, something cool and refreshing doesn’t sound so terrible. Though – with the weather not really making up its mind, I’ve been using this salad as my silent push to MAKE spring happen.

We use lots of great vegetables here and it really creates this happy rainbow dish with bok choy (the star of the show and our base) then add in some crunch carrots, cabbage, edamame, and some cashews! But, friends, I gotta say, the real winner of this salad is the punch peanut lime dressing we have paired with the veggies. We add soy sauce and peanut butter for a salty peanut flavor and it really makes for a fantastic out-of-the-box flavor that can dress up, an otherwise bland regular-old salad.

Finally, YET another great part of this salad – this salad is a real snap to put together and is excellent as a starter or a main course. I love making up this salad and adding some air-fryer tofu or even some rotisserie chicken from the store to make it a complete meal. Best of all – it can come together in just 15 minutes.

Ingredients
  

For the Salad:

  • 5 bunches Baby Bok Choy (chopped)
  • 1.5 cups Purple Cabbage (shredded)
  • 1 cup Carrot (shredded)
  • 1 cup Edamame (shelled)
  • 1/3 cup Cashew
  • 1/4 cup Green Onion (thinly sliced)

For the Peanut Lime Dressing:

  • 3 tbsp Peanut Butter
  • 4 tbsp Soy Sauce
  • 3 tbsp Lime Juice I do about 5 tbsp, just depends on if you like the tartness
  • 1-2 tsp Sriracha
  • 2-3 dashes Fish Sauce (optional)

Instructions
 

For the Crunchy Boy Choy Salad with Peanut Butter Dressing:

  • In a large bowl, add all the salad ingredients and toss to combine.
  • In a jar, add all the dressing ingredients together and stir or shake until evenly combined. I like using a mason jar so I can pop a lid on it and save any leftover dressing for another time.
  • When it's time to serve the salad, pour over the dressing and mix until evenly combined. Serve up as your starter or part of the main!
