Out of all my recipes, this is the one that I make most often. These Ultimate Fudge Brownies are rich and fudgy, with that perfect crackly top and melty bits of chocolate inside. These brownies are my favorite dessert, especially when served warm with a scoop of vanilla ice cream!
How to Make the Ultimate Fudge Brownies

To make the brownies, start by melting together the butter and chopped chocolate. You can melt them in the microwave if you’d like, but I prefer to melt them together in a saucepan over medium-low heat. Once fully melted, I recommend transferring the mixture to a large mixing bowl to help it cool more quickly. While the melted butter and chocolate are still warm, add the granulated sugar and whisk to dissolve. Adding the sugar to the warm chocolate mixture and allowing it to melt helps form that classic shiny top.
Next, it’s important to allow the chocolate mixture to cool a bit before adding the eggs. There’s no need for it to be completely cool, just cool enough that the eggs will not start to cook in the batter. Once it’s no longer hot to the touch, whisk in the eggs. I like to whisk for 2-3 minutes after adding the eggs, as it helps to form a crackly top for the brownies. Mix in the vanilla extract, espresso powder, and salt. The espresso powder is optional, but I highly recommend adding it for the best flavor. I promise that your brownies won’t taste like coffee – it will just enhance that chocolate flavor!
At this point, I like to switch to a rubber spatula to stir in the flour and cocoa powder, as the batter gets a little too thick for a whisk. Once no streaks of flour or cocoa powder remain, fold in the chocolate chips. I typically use semi-sweet chocolate chips, but you can use whatever you want! I’ve tried this recipe with milk chocolate, dark chocolate, white chocolate, and caramel chips. Each flavor brings something unique to the brownies, so go for whatever you crave in the moment!
Transfer the batter to your prepared 8×8 inch baking dish and bake at 350°F for about 30 minutes, or until a tester inserted into the center of the brownies comes out clean. Let the brownies cool before slicing and serving. Enjoy!
Storage
Store the brownies in an airtight container at room temperature for 3-4 days. If you need to store them for longer, these brownies also freeze well. Place the sliced brownies in an airtight container in the freezer and store them for up to two months. The brownies do taste best at room temperature or slightly warmed, so I’d recommend taking them out of the freezer at least an hour before you want to serve them.

- ½ cup (115 g) unsalted butter
- ½ cup (80 g) dark chocolate chop finely or use chocolate chips
- 1 cup (200 g) granulated sugar
- 2 eggs
- 1 tsp (4 g) vanilla
- 1 tsp (2 g) instant espresso powder optional
- ½ tsp (2 g) salt
- ¾ cup (100 g) all purpose flour
- ¼ cup (30 g) cocoa powder
- ½ cup (80 g) chocolate chips optional
Instructions
- Preheat the oven to 350°F and grease or line an 8×8 inch baking dish.
- In a saucepan over medium-low heat, melt the butter and chopped dark chocolate together.
- Once the butter and chocolate are completely melted, transfer them to a mixing bowl and stir in the granulated sugar.
- Allow the mixture to cool slightly before whisking in the eggs and vanilla extract.
- Mix in the espresso powder (if using) and salt.
- Add the flour and cocoa powder and stir until combined. Finally, fold in the chocolate chips.
- Spread the batter into the prepared baking dish. Bake the brownies at 350°F for about 30 minutes, or until a tester inserted into the center of the brownies comes out clean.
- Let the brownies cool before slicing and serving. Enjoy!

- If using a 9×9 inch baking pan, bake the brownies at 350°F for about 25 minutes, or until a tester inserted into the center of the brownies comes out clean.

I made these brownies with Keto dark chocolate chips instead of the regular dark chocolate because that’s all I had. I was worried that this was going to ruin it, but this recipe was so good that these brownies were delicious despite the weird keto chocolate chips haha. Very good recipe!
