The 10-Minute 3-Step Solution for the Best Greek Salad

One of my early dates with my husband was at a Greek restaurant that had the best Greek Salad. This was the first time I’d had feta cheese and I became an instant fan. And since I don’t usually love salad, this delicious version opened my eyes to a whole new world.

Learning to Love Salad

Most people don’t like salad, because they’ve never been served a GOOD salad. They only eat it when they are trying to be good, or on a diet.

For a lot of people salad can seem like a chore. You just have to find a good recipe, and eating healthier gets way easier. You have to find a recipe you love so much you use the biggest bowl you have to eat it, and end up drinking the dressing out of the bottom like you would drink milk after cereal.

For me, this is that recipe. I can’t get enough! I double or even triple the dressing ingredients sometimes, because I just love the vinegary herb flavor coating all my salad ingredients. 

How to Make a Satisfying Greek Salad

I love that I don’t have to worry about feeling hungry when I have already had two bowls of salad! Most of my experience with salad has been quite sad.

Salad always left me wanting more. The trick is to include a protein, such as hard boiled eggs, chicken, beans, quinoa, etc.

Not only is this Greek salad super yummy and filling, but it is still super good for you! You aren’t sacrificing the nutrition because you made a tasty combination.

The baby spring mix is barely noticeable with all of the other ingredients and flavors going on, but there’s actually quite a bit of it and it’s a good source of all kinds of healthy stuff!

Tips and Tricks for Making Greek Salad

If you haven’t washed lettuce with a salad spinner, you don’t know what you’re missing. It makes the most grueling part of preparing salad (cleaning the lettuce) ridiculously easy!

A mandolin makes this recipe go by a lot faster. The onion and cucumber will also always be an even thinness and easier to get into every bite. It’s also really great at cutting down on prep time.

Another tip for making it go faster is to get a rotisserie chicken! It’s already got lots of flavor and spices, it’s already cooked, and all you have to do is cut it up and add it to the bowl.

The recipe is super simple, easy to make, and a definite crowd pleaser! I usually have all the ingredients on hand so it’s a great low stress, quick dinner.

It’s also a great make ahead option. You could make it the day before you know you are going to need it, but just make sure to keep the liquids separate until ready to serve!

Ingredients
  

  • 2 romaine hearts
  • 1 5 oz. container baby spring mix
  • 1 small red onion
  • 1 cup sliced pepperoncini & ¼ cup brine
  • ½ cup mixed fresh herbs dill, oregano, thyme, basil
  • 1 pint cherry tomatoes
  • 2 large cucumbers
  • 1 cup feta crumbled
  • 1-2 cups chicken cooked and cubed
  • 1 garlic clove minced
  • 2 tbs red wine vinegar
  • cup olive oil safflower oil or canola oil will work too
  • salt and pepper

Instructions
 

  • Rinse, and spin the romaine and baby spring mix dry in salad spinner. Move the greens to a large mixing bowl.
  • Combine the brine from the pepperoncini, red wine vinegar, S+P, and oil in a small bowl. Set aside.
  • Thinly slice the onion, and cucumber. Add the cucumber, onion, pepperoncini, herbs, tomatoes, feta, and dressing to the bowl with the greens. Toss to evenly distribute all of the ingredients.
