These Air Fryer Breakfast Potatoes are an easy and delicious way to enjoy breakfast potatoes without having to turn on the oven. The air fryer gives them a crispy exterior with a fluffy inside making them the perfect side for any meal!

Air Fryer Potatoes O’Brien

Potatoes O’Brien is a mixture of  diced potatoes, diced onions, and bell peppers. This classic breakfast dish was invented in the 1900’s and has been a staple American breakfast ever since.

Air Fryer Breakfast Potatoes ingredients.

You only need a few simple ingredients to help you make this delicious air fryer recipe. All of these ingredients are easy to find at your local grocery store. 

Peppers – You will need bell peppers for this recipe. You can use any color that you prefer. 

Potatoes – For this recipe I recommend using russet potatoes as they hold up best. 

Oil – I like to use olive oil for the best flavor in this recipe. 

Substitutions 

Oil: If you don’t have olive oil on hand you can use canola oil, avocado oil, or vegetable oil for this recipe. 

Potatoes: Idaho potatoes can be used in place of russet potatoes. 

Variations / Options / Add-Ins

Here are a few ways that you can personalize this recipe. 

Spicy: Add a little spice to this recipe by adding jalapeno peppers, or red pepper flakes to the seasoning mixture. 

Cheesy: If you love cheese you can add some parmesan cheese to the potatoes in the last few minutes of cooking.

  • air fryer – I used a 6 quart air fryer for this recipe, but you can use any size that you have on hand.

How to Make Air Fryer Breakfast Potatoes

Making these diced potatoes is so simple, just follow the instructions below and you will have a delicious breakfast side dish in no time at all. 

Step 1: Seed and dice the peppers

Remove the seeds from the peppers, and then rinse and chop into 1/4”-1/2” pieces. Set them aside.

Step 2: Wash the potatoes 

Scrub the potatoes well under cold water.

Step 3: Chop the potatoes

Dice the potatoes into 1/4”-1/2” pieces and then add them to a mixing bowl.

Step 4: Prepare the air fryer 

Preheat the air fryer to 400°F. This should take about 5 minutes.

Step 5: Mix the peppers and potatoes

Add the peppers to the diced potatoes and mix.

Step 6: Mix the seasonings

Mix all the spices together in a small bowl.

Step 7: Season the potatoes

Add the spices to the potatoes and toss to coat.

Step 8: Toss the potatoes in oil

Drizzle the potatoes and peppers with olive oil and toss until they are evenly coated.

Step 9: Add the potatoes to the air fryer 

Add the potatoes to the air fryer basket and then shake the basket to force the potatoes and peppers to settle.

Step 10: Cook the potatoes

Air fry at 400° for 18 minutes, shake the air fryer basket every 3-4 minutes.

Step 11: Allow the peppers to cool slightly

Once the potatoes and peppers are done, remove them and let them cool for a couple of minutes.

Pro Tips

Here are a few tips to make sure that your potatoes O’Brien turn out perfectly every time that you make them. 

  • Make sure to dice the potatoes into small enough pieces, no more than half inch cubes, so that they will cook evenly in the air fryer. 
  • Use a light hand when seasoning the potatoes. You can always add more, but if you over season them it can be difficult to fix. 
  • Be sure to shake the air fryer basket every few minutes to make sure that the potatoes cook evenly. 
  • There is no need to peel these cubes of potatoes, however you could peel them if you prefer.
  • You can use yukon golds or even red potatoes, however they may not get as crispy as the russet potatoes. 
  • Top with your favorite sauces or dips such as hot sauce, ketchup or even ranch dressing. 
  • Adjust the seasonings to taste, you can use more or less of garlic powder, onion powder, paprika, salt and pepper. 
  • If you are using a small air fryer you may need to cook these potatoes in batches so that you don’t overload the air fryer.
