I'm fascinated with cake mix cookie recipes for their ease and convenience. I mean, sometimes you just want baking to be simple with only a few ingredients and not a whole lot to do. -- And cake mix cookies certainly fit that bill. All while still delivering up the sweet treat deliciousness that made you want to bake cookies in the first place.

A classic yellow cake mix and some pantry staples combine to create these tasty little Cake Mix Oatmeal Cookies. To whip up a batch, you'll need:

  • Yellow cake mix - Serves as the cookie dough base. Classic yellow cake mix creates the best flavor -- we don't recommend substituting a golden butter or white cake mix in its place.

  • Old-fashioned oats - The oatmeal element to turn the cake mix into oatmeal cookies. Old-fashioned oats create a wonderfully chewy texture in the cookies, however quick oats can be substituted if you'd like.

  • Sugar - A small bit of granulated sugar added to the cake mix sweetens up the oats.

  • Canola oil - Adds the fat needed for the cookies. You can use vegetable oil instead, if you'd like.

  • Eggs - Two eggs provide the moisture and leavening needed for the cookie's dough.

  • Vanilla extract - Brings nice background flavor to the cookies. We always recommend sticking with pure vanilla extract, rather than imitation, for the best flavor result.

  • Cinnamon & nutmeg - Adds subtle spiced flavor to the finished cookies. That being said, Cake Mix Oatmeal Cookies are also quite tasty without this addition, so omit them if you'd prefer.

How to Make Cake Mix Oatmeal Cookies:

These tasty little beauties truly couldn't be much easier to make. Simply combine a yellow cake mix with old-fashioned oats and a handful of other pantry staples and you're good to go. They're even stirred by hand with no mixer involved, so they come together in no-time flat.

To get a batch started, combine dry yellow cake mix, old-fashioned oats, some sugar, ground cinnamon, and ground nutmeg in a large mixing bowl, stirring them all together until everything's well combined.

In a separate bowl, whisk together some canola oil, 2 eggs, and a small bit of vanilla extract. Add this wet ingredient mixture to the dry ingredients and mix until it's all combined.

Drop 2 tablespoonfuls of dough for each cookie onto ungreased cookie sheets, leaving at least 2 inches between cookies. 2-tablespoon cookie scoop makes it super quick and easy to scoop the cookie dough and keep the cookies roughly the same size.

Pop the pan in the oven and bake the cookies for 10-11 minutes until they're set and just lightly brown.

Cool on the pan for 1 minute and then remove the cookies to a cooling rack to cool completely. Store tightly covered in an airtight container.

Ingredients

  • 1 (15.25 oz.) box yellow cake mix
  • 2 c. old-fashioned oats
  • 1/4 c. granulated sugar
  • 2/3 c. canola (or vegetable) oil
  • 2 eggs, lightly beaten
  • 1 tsp. vanilla extract
  • 1 tsp. ground cinnamon
  • 1/16 tsp. ground nutmeg

Instructions

  1. In a large mixing bowl, combine dry cake mix, oats, sugar, cinnamon, and nutmeg. Stir until well combined.
  2. In a separate bowl, whisk together oil, eggs, and vanilla extract. Add to dry ingredients and mix until combined.
  3. Drop 2 tablespoonfuls dough onto ungreased cookie sheets, leaving at least 2 inches between cookies.
  4. Bake at 350℉ for 10-11 minutes until set and just lightly brown.
  5. Cool on pan for 1 minute; remove to a cooling rack and cool completely.
  6. Store tightly covered in an airtight container.
TRACEY'S NOTES:
  1. Quick oats may be substituted for the old-fashioned oats, though quick oats create a less chewy texture in the finished baked cookies.
  2. You can leave out the cinnamon and/or nutmeg, if you prefer, and the cookies will still taste great. We just think they taste even better with them both in there!
  3. Stir in 1 cup of raisins or coarsely chopped pecans as add-ins, if you'd like.
  4. A 2-tablespoon cookie scoop makes it super quick and easy to scoop the cookie dough and keep the cookies roughly the same size.
