How to Make Corn Dip with Cream Cheese

STEP 1: MIX

First, combine the fiesta corn, jalapeno, and shredded cheese in the bowl of a slow cooker. Stir to mix.

STEP 2: CREAM CHEESE

Next, place the cream cheese on top of the corn mixture. 

STEP 3: COOK

Finally, place the lid on the slow cooker and set to cook on low for 2 hours. Halfway through the cook time, remove the lid and stir the ingredients to mix the cream cheese into the corn mixture. Continue cooking for the remaining time.

  • 1 jalapeno, deseeded and diced
  • 1 cup Monterey jack cheese, shredded
  • 8 ounces cream cheese, 1 package

    I’ve had lots of cold corn dips and relishes, but never one that was warm. This was fantastic! I served it with slices of toasted baguette and it was a true hit. Delicious!
