Greek Vegetarian Orzo Bowls

These Greek Vegetarian Orzo Bowls are bright, fresh, and SO easy to make. I’ve been relying on this “salad” bowl lately as a nice side OR even a whole meal on one of those days that seems to happen all too often where “we should cook but I don’t want to” is what’s said at dinner time. I’m sure we all know what I’m talking about. And let’s talk about how EASY this one is to make. We boil up a good bit of orzo – mine took about 10 minutes. While the orzo boils away, we chop up all the veggies! And really – THAT’S IT. Once that’s done, mix it up, add a little salt, oil, lemon juice, and dill (if you have it) and your bowl is good to go!

The fresh flavors are the most inviting to me and I love how this can be dressed up or down depending on what mood you’re in. Adding extra lemon juice for a little pep? Great! Dill? Always, yes. Oh and proteins? Any protein will do but my Chicken Piccata Meatballs go AMAZINGLY well.

Ingredients
  

  • 1 cup Orzo
  • 2 Roma Tomatoes (diced)
  • 2 Persian Cucumbers (diced)
  • 1 cup Chickpeas (drained)
  • 1/2 cup Kalamata Olives (diced)
  • 1/4 cup Capers (drained)
  • 1/4 cup Crumbled Feta
  • 4 tsp Lemon Juice To taste! I liked about half a juicy lemon
  • 2 tsp Dill Fresh (if possible)
  • Salt (to taste)

Optional Additionals:

  • Tzatziki
  • Hummus
  • Pita Chips

Instructions
 

For the Greek Orzo Bowls:

  • We'll start by boiling the orzo according to the package instructions- it should be about 10-12 minutes. Be sure to stir it once in a while so it doesn't stick.
  • While the orzo is boiling we'll dice up our veggies - Roma tomatoes, cucumbers, and olives.
  • Once the orzo is done, drain it and add it to a bowl. Top with the vegetables. Then add chickpeas, capers, and feta. Top with a little salt, lemon juice, and dill.
  • Mix the whole thing together and enjoy!
