No Flour Peanut Butter Protein Cookies

When it comes to packing snacks for my family, I like to have things that are better than a bag of chips. I want something we’ll all enjoy eating that is also good for us.

That’s why I love these peanut butter protein cookies. They look and taste like an indulgent dessert, but they’re loaded with protein and whole grains to boost energy and ability to focus.

 

These no flour peanut butter protein cookies are great if you have any gluten or dairy sensitivities in the house. It’s an awesome alternative to store bought cookies.

Super easy, kids love it, I love it, good ingredients, and more free time for mom? The biggest mom win yet!

Pro Tip: Keep a bag in your car and replace them every week (if they last that long)! They’re perfect for satisfying your hunger so you aren’t tempted to visit a drive-thru.

How to Make Peanut Butter Protein Cookies

One of the biggest reasons I love this recipe is how little time and effort it takes on my part. After all, the reason we end up making poor eating choices is because unhealthy food is so convenient!

To make these peanut butter protein cookies, all you need is protein powder, oats, baking powder, a little bit of brown sugar, vanilla, eggs, peanut butter, and dairy free chocolate chips.

Add your dry ingredients (minus the chocolate chips) in a medium sized mixing bowl.

Stir it around until it is all mixed together well. I go at it for about 20 seconds just to make sure the baking powder is evenly throughout it.

Next, add in the two eggs, peanut butter, and vanilla.

Stir until all of the dry ingredients are moistened and you don’t see and pockets of egg white any more.

Now just fold in your chocolate chips and you’re almost done!

Using a spoon or small scooper, drop 2 tablespoons worth of the cookie dough onto a parchment lined baking sheet.

For the last step, bake at 350 for 10-12 minutes. I know it’s hard to contain yourself, but allow the cookies to cool for 5-10 minutes before attempting to handle. They will likely fall apart easily (and burn your mouth)!

Ingredients
  

  • cup gluten free quick oats
  • cup vanilla protein powder gluten and dairy free
  • 1 ½ teaspoons baking powder
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter
  • ¾ cup dairy free chocolate chips

Instructions
 

  • Preheat oven to 350.
  • In a medium sized mixing bowl, combine the oats, brown sugar, protein powder, and baking powder.
  • Add in peanut butter, eggs, and vanilla. Stir until completely moistened.
  • Fold in the chocolate chips.
  • Drop two tablespoon sized portions of dough onto a parchment lined baking sheet using a spoon or hand scooper.
  • Bake for 10-12 minutes, and cool for 5-10 minutes before handling or serving.

Notes

Weight Watchers Freestyle = 9 Points Per Cookie for 8 Cookies. Points could be lower depending on chocolate chips and peanut butter.

  2. Made 6 large cookies from this recipe. I halved the amount of sugar and they still tasted good, if a little unsweet. And used sliced almonds instead of chocolate chips for toppings. The nutrition profile of this is so good; peanut butter, whey protein, and oatmeal, all super good for you, with very little of the not so good stuff. Thanks!

    • Well, that was confusing, wasn’t it? I had 12 servings in one spot and 8 in another. Most of my protein cookies make 12 servings and I must have defaulted to that here. This recipe makes 8 generously sized cookies at 391 calories each. If you make them smaller to get 12 cookies, they are only 261 calories. When I make them small, I always end up eating 2 so I make them a little bigger and limit myself to one at a time. Thanks for asking the question so I could clarify the discrepancy in the recipe card!

    • I used Smucker’s Natural Creamy peanut butter. It’s natural but doesn’t get the same oil separation as the all-natural brands that are made with just peanuts.

    When I make protein desserts, they tend to have a grainy quality that I’m not too thrilled about. These, however, came out tasting like ACTUAL cookies. ? I used Ghirardelli 60% Cacao baking chips, and I swapped out the brown sugar for a sugar/Splenda blend to tamp down on the sweetness a lil’ bit. Worked wonderfully – these are absolutely delicious.

    Word to the wise… These are STILL cookies, so they’re a tad indulgent. But when I’m craving a treat, it’s nice knowing there’s a non-negligible amount of protein in each one.

    I used to go to the Lenny & Larry’s Complete Cookies for my fix, but they’ve been making my tummy upset lately. SO thrilled to have come across this recipe – these will certainly be a replacement (and money saver!) for my protein cookie habit. Thank you!

    Thank you so much for sharing this recipe! I’m an RA for a freshman dorm, and I did a program on nutrition and bodybuilding, so I whipped up a batch of these cookies and they were a huge hit! My residents ate them all! Given that I’m a college student without a hefty income, this recipe was quite affordable, and also given that I am not a good baker at all, it was surprisingly easy to make! I used chocolate protein powder instead of vanilla, and I used soy butter instead of peanut butter (for allergies).
    Thanks again for sharing this recipe. I am definitely going to make these again in the near future!
