Usually, one leg will serve each person, so today, if I cook for two people, I will need two pieces of duck legs.

To season them, I will make a paste of four cloves of garlic, a teaspoon of sea salt, half a teaspoon of freshly ground pepper, a teaspoon of paprika, a teaspoon of marjoram and a tablespoon of duck fat.

Add a sunflower or olive oil spoonful if you don’t have duck or pork lard.

How to Make the Air Fryer Duck Legs?

Seasoning the Duck Legs

Because I want to use fresh garlic instead of granules, I will first chop the garlic cloves so you can grind them more easily in the mortar.

I put the chopped garlic in the mortar and add a spoonful of coarse sea salt, which will act as an abrasive, making our work easier.

After I crushed them well in the mortar and rubbed them with the pestle until I obtained a garlic paste, I added the other spices, namely freshly ground pepper, paprika and marjoram. To give consistency to this paste and to stick better to the legs, I will also add a spoonful of duck fat.

I mix the ingredients with a spoon until I get a homogeneous paste.

With this paste, grease the duck legs well, massaging them well on all sides so that the flavours penetrate the meat. For even more effect, I recommend you cover them with foil and put them in the fridge for at least an hour.

But to get the tastiest duck legs in the air fryer, keep them in the refrigerator overnight, and you will be delighted with their taste.

Cooking the Duck Legs

In this recipe, to cook the duck legs in air fryer, there is no need to preheat the air fryer. Place only the thighs in the basket with the skin down without adding any oil.

Set the air fryer to a temperature of 150 C (302 F) and cook for 35 minutes.

Halfway, Turn Them Upside Down

After this time, turn the thigh’s skin side up and fry them at the same temperature for another 35 minutes.
