One of my favorite ways to treat my family is to make waffles on the weekend. But ordinary waffles are boring so I’m always looking for fun new recipes to try. These Lemon Ricotta Waffles with Mascarpone and Blueberries were a major win!

About These Lemon Ricotta Waffles

The recipe comes from The Hotel Saugatuck in Saugatuck, Michigan. The Hotel Saugatuck is a luxury bed and breakfast with stunning views of Lake Kalamazoo.

And clearly, they take the breakfast side of their business seriously because this recipe is a flavor-infused morning delight! The tartness of the lemon is balanced perfectly by the mascarpone and blueberries, which make the dish as pretty as it is tasty.

Lemon Ricotta Waffles with Mascarpone and Blueberries

Ingredients
  

  • 1 1/2 c flour
  • 1/4 c sugar
  • 1 T baking powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 2 eggs
  • 1/2 c ricotta cheese
  • 1/2 c buttermilk
  • 1/2 c whole milk
  • 2 T melted butter
  • Zest from 1 lemon
  • Juice from 1 lemon
  • 8 oz. mascarpone
  • 1 T lemon curd
  • 1 Pt Blueberries for garnish

Instructions
 

For Batter:

  • In a large mixing bowl, mix flour, sugar, baking soda, baking powder and salt.
  • In separate large bowl, whisk eggs, ricotta cheese, buttermilk, whole milk and butter and lemon juice together.
  • Mix in lemon zest to the wet mixture
  • Pour wet mixture into the dry mixture and stir until smooth.
  • Cook according to waffle iron instructions.

For mascarpone mixture:

  • In a small bowl, blend lemon curd into mascarpone.
  • Place cooked waffle on plate and top with mascarpone and blueberries.

You can sprinkle with powdered sugar before serving if you like. Also, blueberry syrup works really well with these lemon ricotta waffles, but you can always use regular maple syrup too. I make my own “blueberry syrup” by microwaving frozen blueberries for 45 seconds.

For a complete breakfast, serve with bacon strips or sausage links and a glass of orange juice or milk.

For family members with a big appetite, a side of yogurt with added berries should round out the meal nicely. Or, instead of juice or milk, serve up Blueberry Spinach Smoothies instead.

    • Yes, you can make the batter the night before, just make sure you keep it in the refrigerator. You’ll probably want to stir it in the morning before you put it in the waffle maker, in case the ingredients have separated.
