The BEST Vegan Coffee Cake recipe ever! With vanilla, cinnamon, and topped with a delicious easy crumble you can’t go wrong!

Is there anything better than a cake that is topped with a cinnamon streusel? I don’t think there is. I seriously can’t get enough of this, and no one even believed me when I told them that this recipe is vegan – woohoo! When I was a child I never ever wanted to try a coffee cake because I thought coffee was so gross, and I would not listen to any one that told me that this cake is not coffee flavored, that is just it’s name. Well, I should have listened. I could have had so many more years enjoying this delicious cinnamon-y and vanilla flavored cake. Oh well, I guess I just have to catch up now!

Instructions To Make Vegan Coffee Cake

  1. Preheat your oven to 350 degrees F, and line an 8×8 pan with parchment paper. Set aside.
  2. In a small bowl, mix together your cinnamon filling ingredients until smooth and set aside. In a separate bowl, make your crumble topping by mixing all the crumble ingredients together, until a coarse texture remains. Set aside.
  3. Prepare the cake in a large mixing bowl, mix together your flour, both sugars, baking soda, and salt. Then mix in your vanilla extract, apple cider vinegar, olive oil, and almond milk. Mix until just combined.
  4. Spread half of your cake batter into your prepared pan, spread your cinnamon filling evenly over the batter. Top with the remaining cake batter and evenly sprinkle your streusel topping over the cake batter.
  5. Bake for 30-35 minutes or until a toothpick inserter in the middle come out almost clean. Allow your cake to cool completely.
  6. Make your optional glaze by mixing together your glaze ingredients and drizzle over top of the cooled cake. Slice into 16 equal pieces and enjoy!
