These easy broiled pork chops are juicy, tender, and covered in an amazing homemade sauce. The glaze is sweet and tangy, and it’s infused with hints of garlic and ginger.

Broiled Pork Chops

Oh my goodness, if you’ve never learned how to broil pork chops, you’re in for such a treat! This recipe couldn’t be any easier and it’s so incredibly delicious.

The brown sugar and ketchup caramelize in the oven to coat the pork chops in a delicious sticky glaze. As the glaze is layered on throughout cooking, it creates a delicious crisp on the edges.

Those flavors are enhanced with the garlic and ginger, which pair so perfectly with the pork.

These pork chops are seriously so good and so easy to put together! It’s a family favorite because everyone loves the flavor and I love that it’s ready in under 30 minutes! Try pairing this recipe with some mashed potatoes and roasted vegetables for a quick and easy family dinner.

Ingredients

Pork Chops: Bone-in pork chops that are 3/4”-1” thick and have a small amount of marbling will work best in this recipe. 

Ketchup: I love coating broiled pork chops in sauce because it helps prevent them from drying out. I especially love using a sauce with a ketchup base because it adds flavor, the texture holds up well under heat, and it caramelizes in the oven.

Sugar: Brown sugar amplifies the sweetness in the ketchup and balances out the Worcestershire sauce. Since it caramelizes under the broiler, it creates the sticky sweet glaze that makes this recipe so delicious.

Spices: A combination of fine sea salt, garlic powder, and ground ginger seasons the pork perfectly. The salt enhances the flavors of the dish, while garlic and ginger are a classic combination that taste amazing with pork.

Worcestershire Sauce: Worcestershire sauce adds lots of flavor to meat. It adds an umami flavor that balances out the glaze into a well-rounded flavor profile.

How To Broil Pork Chops

Adjust the oven rack so that it’s in the upper third of the oven, then set the oven to broil. Line a baking sheet with aluminum foil, and top that with a wire baking rack (you can also use a broiler pan or a cast iron grill pan). Mix the glaze together in a small bowl. Place the pork chops on the prepared baking sheet, and brush the tops and sides with the glaze. Flip the pork chops over and brush the tops with the sauce.

Broil the pork chops, flipping after a few minutes. Very carefully remove the pork chops from the oven, and brush all sides with the sauce again. Broil the pork chops again, flipping after a few minutes, then coat the top with the remaining sauce.

Is It Better To Bake Or Broil Pork Chops?

Bone-in pork chops definitely taste better when they’re cooked in the oven under the broiler. It only takes about 15-18 minutes to broil pork chops that are 3/4”-1” thick. Since there’s so little prep time and minimal cook time, it’s my favorite way to cook pork chops in the oven.

What Is The Secret To Juicy Pork Chops?

Pork chops are a pretty lean cut of meat, which is why they don’t get more tender the longer you cook them. That’s why it’s better to cook them quickly instead of low and slow.

To keep pork chops from drying out in the oven it’s best to cook them at a high temperature for a shorter amount of time. That’s why broiling them is the easiest way to get perfect results.

Should You Flip Your Pork Chops In The Oven?

Yes, you should flip your pork chops as they cook in the oven because it ensures even cooking. When the meat’s cooked evenly, you’re much more likely to end up with tender pork chops instead of pork chops that are overcooked in one spot.

Ingredients

  • 1/3 cup ketchup
  • 3 Tablespoons brown sugar
  • 1 Tablespoon water
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon ground ginger
  • 4 bone-in pork chops (3/4”-1” thick)

Instructions

  1. Move the oven rack to the second highest setting (about 6” from the broiler). Set the oven to broil. Line a baking sheet with aluminum foil, then place a wire baking rack on top.
  2. To a small mixing bowl, add the ketchup, brown sugar, water, salt, garlic, Worcestershire sauce, and ground ginger. Stir until fully combined.
  3. Place the pork chops on the wire baking rack. Brush the tops and sides with the sauce, then flip and brush the pork chops with sauce again. 
  4. Broil the pork chops for 6 minutes, flipping halfway through (3 minutes per side). After 6 minutes, very carefully remove the pork chops from the oven and brush again with the sauce on both sides. Return the baking sheet to the oven and broil for another 8 minutes, flipping halfway (4 minutes per side). Remove the pork chops from the oven one more time, and brush the remaining sauce on the top of the pork chops (no need to flip). Return the baking sheet to the oven and broil for another 3-4 minutes (or until the pork chops read 145F on an instant read thermometer).
  5. Remove from the oven, serve with your favorite sides, and enjoy!
