Waffle cookies are baked in your waffle iron (you probably guessed that!) and that cross hatch design really adds excitement to any cookie tray. My waffle cookie recipe is made with simple, classic cookie ingredients. I often find myself making these cookies when I need a treat in a hurry since I already have everything I need right at home. There are no crazy ingredients here! Just the basics that go into most irresistible cookies. 

With this waffle cookie recipe, you can choose what size cookies to make. Fill your waffle iron with cookie dough to make big cookies or add just a few tablespoons of batter to make smaller, bite sized cookies. I like the bite sized version because they are perfect for dipping and popping right in your mouth! Waffle cookies dipped in cheesecake dip or funfetti dip is like dessert heaven! 

Now that you are probably dying to try a waffle cookie yourself, let me get into all the details about how to make these yummy treats. I know they are going to become one of your favorite, go-to cookies.

  • Butter – I always use unsalted butter when baking. You will add the perfect amount of salt to the cookie dough later, so there is no need for any extra!
  • Dark brown sugar – Dark brown sugar has a super rich taste that really makes these cookies stand out.
  • Eggs – Room temperature eggs will blend into the cookie dough more evenly. 
  • Vanilla extract – Be sure to use real vanilla extract rather than artificial vanilla. The flavor difference is huge!
  • Almond extract 
  • Flour – Gluten-free baking flour works wonderfully in this recipe, making beautiful gluten-free waffle cookies. 
  • Cinnamon
  • Baking soda
  • Salt

Variations

My waffle cookie recipe is amazing exactly as it is written. However, I know you may sometimes want to tweak a recipe to make it perfect for you and your family. Here are a few variations you may want to try. 

  • Skip the almond extract and use just vanilla extract to make these waffle cookies nut-free.
  • Replace ¼ cup of flour with ¼ cup unsweetened cocoa powder for a tasty chocolate waffle cookie. 
  • Light brown sugar can be used in place of dark brown sugar for a milder flavor.

How to Make Waffle Cookies

  1. Preheat the waffle iron: Plug in your waffle iron before you start making your cookie batter. It will be nice and hot by the time your cookie dough is ready to bake. 
  2. Cream the butter: Cream the butter and brown sugar until they are light and fluffy. Be sure to scrape down the sides of the bowl to really blend in any bits of butter, making a super smooth batter. Add the eggs to the butter mixture, cracking in one egg at a time and mixing between additions. Stir the extracts in as well. 
  3. Add the dry ingredients: Mix in the flour, cinnamon, baking soda, and salt. The batter will be nice and thick. 
  4. Bake the cookies: Scoop about two tablespoons of batter into the center of the waffle iron. Close the waffle iron and let the cookies cook until golden brown. This takes about 3-4 minutes. When the cookies are baked, they will be very easy to pop out of the waffle iron and will not stick or pull apart. 
  5. Cool and make more: Let the baked waffle cookies cool on a wire rack while you cook the remaining cookie batter. Then, enjoy!

Quick Tip

If you have a larger waffle iron, you can bake more than one cookie at a time as long as you make small, two tablespoon size cookies. Space the batter scoops about 3-4 inches apart and then cook as directed. This will help you bake the waffle cookies even faster so you can eat them sooner!

How to Store Waffle Cookies

Once your waffle cookies are baked and cooled, you can store them in an airtight container at room temperature for up to a week. Be sure to keep the cookies nicely sealed so that they stay soft and do not dry out. 

If you want to warm your waffle cookie before eating it, try microwaving the cookie for just 5-10 seconds. It will be warm and fresh, just like the day they were cooked in the waffle iron!

Can you put cookie dough in a waffle maker?

Yes! You can put cookie dough in a waffle maker to bake cookies. While these waffle cookies are specially designed to go in the waffle maker, regular cookie dough can as well. Scoop about two tablespoons of cookie dough into your waffle maker and cook until the cookie is a deep golden brown. It will be a little crispier than if you baked it in the oven but it will be delicious!

Are waffle cookies crunchy or chewy?

These waffle cookies are crisp on the outside but soft in the center. They have a similar texture to a Belgian waffle but with a sweeter, richer cookie taste.

Is waffle cookie batter thicker than waffle batter?

Yes! This waffle cookie batter will be much thicker than regular waffle batter. It will look more like a cookie dough than a runny waffle batter.

Ingredients  

  • 1 cup butter, softened
  • 1 ½ cups dark brown sugar
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 3 ½ cups flour
  • ½ teaspoon cinnamon
  • teaspoon baking soda
  • ¼ teaspoon salt

Instructions 

  • Turn on your waffle iron to preheat.
  • Add the butter and brown sugar to the bowl of a stand mixer and beat with a paddle attachment until light and fluffy.
  • Add the eggs to the bowl one at a time, mixing after each addition.
  • Add the vanilla extract and almond extract and blend well.
  • Add the flour, cinnamon, baking soda and salt and mix again to make a thick, smooth batter.
  • Scoop two tablespoons of the waffle batter on to the center of the hot waffle iron. Close the top of the waffle iron and let the waffle cookie cook until golden brown. This takes about 3-4 minutes in most waffle iron but every one will be a little different. When the cookie is ready, it will easily pull away from the waffle iron and not stick at all.
  • Place the cookie on a cooling rack and continue to cook the rest of the batter the same way.

Notes

  • If your waffle iron is able to make more than one waffle at a time, you can cook multiples. The batter typically goes in the center of the waffle iron grid to make the best pattern.
  • These waffle cookies bake beautifully with all purpose gluten free flour in place of regular flour. Use your favorite gluten free baking mix to make delicious gluten free waffle cookies. 
  • Replace the vanilla extract with a tablespoon of dark rum. Some traditional French waffle cookie recipes use rum rather than extract for a tasty flavor twist.
