The only thing that can make a one-pot dinner more perfect for a weeknight meal, is when it has less than 10 ingredients! One-Pot Sausage & Broccoli Pasta checks both of those boxes with flying colors. But do not be fooled by the simplicity of this meal, the flavor is deliciously deep.

For this meal, I used Italian sausage that came in links. I removed the casing and cooked them the same as any ground sausage, so don’t be worried if you cannot find ground sausage for this. If you can only find ground pork, you will want to add in fennel, red pepper flakes, and Italian seasoning when you brown the meat. Be sure not to use breakfast sausage as that tends to be more on the sweet side.

It is important to use fresh broccoli and not frozen for this recipe. Frozen broccoli will release too much liquid into the pasta. You also don’t get the same crunch from frozen broccoli, and that is an important texture component to this meal. Another important thing to use is grated parmesan and not shredded. You want it to be able to melt into the thickened broth easily.

As I have said many times, if you don’t already have a large, wide, high-walled pan with a lid in your kitchen arsenal, you need one! My favorite on is the 12-inch saute pan from Ninja Kitchen. It is amazing because it works for frying foods, sauting, one-pots, stove to oven cooks and more. If your set of pots and pans does not yet have a 12-inch (or larger) saute pan, you should really check out this one from Ninja Kitchen.

With the meat, starch and veg all in one pot, a side dish really isn’t all that necessary. Having sad that, a slice of french bread would have been nice on the side. Maybe slightly toasted with a smear of butter. But it really isn’t necessary.

One-Pot Sausage & Broccoli Pasta

A 30 minute one pot meal made with sausage, broccoli, parmesan cheese and orzo pasta

Ingredients

  • 2 lb Italian Sausage
  • ½ Yellow Onion minced
  • 2 Garlic Cloves minced
  • 1 lb Orzo Pasta
  • 2 qt Broth vegetable or chicken
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 cups Parmesan Cheese grated
  • 3 cups Fresh Broccoli chopped

Instructions

  • In a large saute pan over medium-high heat, add sausage, onions and garlic. Cook and crumble until no longer pink. (Try not to leave any larger chunks of sausage).
  • Add orzo and 1½ quarts of broth, stir to combine. Reduce heat to medium and cover with lid. Let cook for 15 minutes.
  • Remove lid and add remaining broth, cheese and broccoli. Cover with lid, remove from heat and let sit for 5 minutes before removing lid to serve.
