These muffins are full of blueberries, which contain antioxidants, and they are bursting with other nutrients such as Vitamin C, A, K and folate.

You only need a few simple ingredients to help you make this delicious air fryer muffins recipe. All of these ingredients are easy to find at your local grocery store, or you may already have them on hand in your kitchen. 

Flour – For this recipe you need to use all purpose flour or plain flour.  You can use any brand that you have on hand, I just use whatever brand is the cheapest. 

Blueberries – I used frozen blueberries that have been thawed for this muffin recipe. 

Butter –  I’ve found that unsalted butter works best in baking recipes like this one. 

Substitutions

Butter: If you don’t have unsalted butter on hand, salted butter can be used in a pinch. 

Blueberries: I used frozen blueberries, but fresh blueberries can also be used. 

Variations / Options / Add-Ins

To make a variation of this air fryer muffin recipe, try adding in other mix-ins such as: 

Chocolate chips – Add 1/2 cup of mini chocolate chips to the batter for a delicious chocolate chip blueberry muffin. 

Nuts – Walnuts or pecans add a lovely crunch and nutty flavor to these muffins. 

Cinnamon – For a touch of warmth, add in 1 teaspoon of ground cinnamon to the batter.

  • air fryer – I used an 8 quart air fryer to make these muffins, however, you can use a small air fryer, you will just need to make them in more batches. 
  • cupcake liners – Silicone muffin liners really hold up well in the air fryer, because they are study and won’t blow around. 

How to Make Air Fryer Blueberry Muffins

Making this muffin recipe is so simple. Just follow the instructions below and you will have a tasty kid-friendly breakfast in no time all. 

Step 1: Whisk together the dry ingredients

Mix the sugar, baking soda, baking powder, salt, and flour in a large bowl.

Step 2: Stir together wet ingredients and melted butter

Melt the butter and mix with the milk, eggs, and vanilla extract.

Step 3: Make the batter

Gradually mix the dry ingredients into the wet mixture until a smooth batter forms.

Step 4: Fold in the blueberries

Once batter forms, fold in 1 1/2 cups of the blueberries. 

The blueberries are added to the batter.

Step 5: Fill the cupcake liners

Scoop batter into jumbo muffin liners, and fill 2/3 of the line. 

Step 6: Top with blueberries

Top the batter with a few loose berries from the remaining berries. Press into the batter slightly. 

Step 7: Sprinkle with sugar

Sprinkle batter with a pinch of decorating sugar. 

Step 8: Air fry the muffins

Place muffins in the air fryer basket and cook at 375°F for 8 minutes, then reduce heat to 250° for 17 minutes. Make sure muffins are fully cooked using a toothpick pierced in the center of the muffin. If the toothpick has uncooked batter when removed, continue to cook 1 minute at a time until fully cooked.

Step 9: Cool the muffins

Let muffins cool on a rack before removing them from liners.
