I struggle with lunch if I can’t eat at home because I mostly only like dinner food. When I’m at home, this is easy since I can just warm up leftovers, like this Baked Caesar Chicken. But when I chaperone a field trip or when I’m going to spend most of the day away from home, I find it challenging to come up with lunch ideas I will actually enjoy eating.

Of course, I’m also really greedy with my time so I shy away from options that require a lot of prep time. To complicate matters further, I have one child in college and another starting soon, which means eating out isn’t a responsible choice for me so I have to figure out a lunch I can make at home.

This Caesar Chicken Salad Sandwich was the perfect solution to my lunch dilemma.

How to Make Caesar Chicken Salad Sandwiches

Aside from the awesome taste, another great thing about these Caesar Chicken Salad Sandwiches is that they are so incredibly easy to make. Just 5 ingredients and very little effort, then lunch is ready!

Step 1 – Make the Sauce

While traditional chicken salad sandwich recipes usually call for mayonnaise and yogurt or sour cream, in this recipe we swap out the yogurt/sour cream with Caesar salad dressing. This is where that flavor we love comes in.

Simply mix the mayonnaise and Caesar dressing together in a large bowl.

Step 2 – Add Remaining Ingredients

Next, add the chicken to the sauce and stir until it’s combined well. Then, add the shallots and cheese.

Mix well. Then transfer to a storage container and cover (or simply cover the mixing bowl with plastic wrap).

Step 3 – Refrigerate

Though you can eat the Caesar chicken salad right away, it tastes so much better if you let the flavors combine for a little while. I like to make it the night before for sandwiches the next day, but if I’m making it the same day I aim for a minimum of 30 minutes in the refrigerator.

If you’re on a low-carb diet, simply eat it out of a bowl (you should also try these Keto Chicken Thighs). You can also serve it in lettuce leaves to add a crisp, fresh element.

I like to use it as a sandwich filling. This way I can eat it on the go.

What to Serve With Caesar Chicken Salad Sandwiches

The whole reason I converted Caesar salad into a sandwich was to avoid needing utensils. So, I like to serve these sandwiches with easy finger foods:

  • Apple slices
  • Grapes
  • Cheese cubes
  • Celery sticks
  • Carrot sticks
  • Pickle spears
  • Olives
  • Potato chips

Ingredients
  

  • 3 cups shredded chicken rotisserie chicken works great
  • 3/4 cup mayonnaise
  • 1/4 cup Caesar salad dressing
  • 1 red shallot diced
  • ¼ cup parmesan shredded

Instructions
 

  • In a large mixing bowl, add the mayonnaise and dressing.
  • Mix together until thoroughly combined.
  • Add the chicken and mix in gently.
  • Add the shallot and cheese, and mix until combined.
  • Put in a storage container and cover.
  • Refrigerate for at least 30 minutes.
  • Serve on your favorite bread and enjoy!
