If you’ve had my cranberry brie bites before, this baked brie recipe is kind of like the super-sized version of those.

Baked brie, or brie en croute if you want to get fancy about it, is simply a wheel of brie cheese that has been wrapped with puffy pastry dough and baked in the oven. It’s an impressive and delicious appetizer that can be served with other party snacks and charcuterie board favorites like crackers, meats, fruits, and vegetables. 

Baking brie helps to bring out its unique flavors, and the texture is out-of-this-world—incredibly creamy, cheesy, and melty, with that irresistibly crispy puff pastry exterior. The puff pastry helps keep the cheese from drying out during baking, and it also holds in the topping you add to the cheese—in this case, cranberry sauce.

  • Puff pastry – Pepperidge Farm is easiest to find; it’s in the frozen section of the grocery store, but any pre-made puff pastry will work.
  • Wheel of brie – It can be anywhere from 8 to 14 ounces.
  • Cranberry sauce – Store-bought or homemade cranberry sauce.
  • Egg – For a golden, shiny crust.
  • Sliced baguette or crackers – Use these for serving.

Variations

  • Try mango chutney for an east-meets-west mashup.
  • Add a sprinkle of fresh herbs like rosemary or thyme over the cheese before wrapping it in pastry.

How to Make Baked Brie

  1. Prepare: Preheat the oven to 400ºF, and line a sheet pan with parchment paper. Place the sheet of puff pastry on a floured work surface. Use a knife or pizza cutter to trim the pastry into a square roughly twice the size of your wheel of brie. 
  2. Assemble: Set the brie in the center of the puff pastry, and cover the top of the cheese with the cranberry sauce. Wrap the pastry around the cheese, pressing the corners together tightly at the top to create a seal. 
  3. Brush with egg wash: Carefully transfer the wrapped brie to the prepared sheet pan. Then, whisk together the egg and a splash of water in a small bowl. Use a pastry brush to apply the egg wash to the puff pastry, coating it completely.
  4. Bake: Place the sheet pan in the oven, and bake for 40 to 50 minutes, or until the dough is golden brown. Cool for 8 to 10 minutes before serving.

Quick Tip

Depending on the size of your brie wheel, you may not use the full amount of cranberry sauce!

How to Store Leftover Baked Brie

Any leftover baked brie should be stored in an airtight container or wrapped tightly in plastic wrap. It will keep fresh in the refrigerator for up to 5 days. To reheat, simply place the cheese back on the baking sheet, and heat at 350ºF for about 10 minutes, or until warmed through. Be careful not to burn!

Do you take the rind off brie before baking?

No, you do not need to take the rind off of brie before baking. The rind is edible and will get crispy when baked! 

Does baked brie stay melted?

No, baked brie will not stay melted. It will still be slightly softened as it slowly cools, which is great if you want to serve it as a dip with breadsticks, crackers, or crostini. 

How do you tell baked brie is done?

Baked brie is done when the pastry is golden brown and lightly crisp. By the time the exterior is done baking, the inside will be melted too.

Can you overcook brie?

Yes, it is possible to overcook brie. If it’s in the oven too long, it will start to harden again, resulting in a tough, rubbery wheel of cheese.

Ingredients  

  • 1 sheet puff pastry thawed but still cold
  • 1 wheel of brie 8 to 14 ounces
  • ¼ to ½ cup cranberry sauce or other jam/preserve of your choosing
  • 1 egg

To serve

  • Sliced baguette or crackers

Instructions 

  • Preheat the oven to 400 F.
  • Lay out the sheet of puff pastry onto a floured countertop or large cutting board. Using a knife or pizza cutter, trim the pastry into a square roughly twice the size of your wheel of brie. Place the brie on the center, then cover the top of the cheese with the cranberry sauce. Depending on the size of your wheel, you may not use the full ½ cup.
    1 sheet puff pastry, 1 wheel of brie, ¼ to ½ cup cranberry sauce
  • Wrap the pastry around the sides of the cheese, pressing the corners together at the top to seal completely. Move to a parchment lined sheet pan.
  • With a fork, mix together an egg wash with the egg and a small splash of water. Using a pastry brush, coat the outside with a thin layer, making sure to get into the corners.

  • Bake for 40 to 50 minutes, until the dough is cooked through and it has a golden brown color. Let cool for 8 to 10 minutes before serving with sliced baguette or crackers.
