Once your Jamaretti logs are ready to cut, you notice they really look like railway tracks and that is why they are know as Eisenbaner cookies. Eisenbahner means railroad man in German. Beautiful combination of homemade shortbread dough, tangy jam and almond paste makes tasty and attractive cookies.

I cut logs to be one inch wide. It is absolutely up to your preferences to cut the size you like. For us, this size is just enough to serve on little coffee plate, next to small cup of freshly made espresso. Two bites to enjoy during afternoon break.

This is cold dough cookies recipe since you cool it before you form the logs out of shortbread dough for the best results.

The only ingredient you can improvise with is jam. The most attractive version calls for red currant.

What does red currant jam taste like?

Currant jam is both sweet and tart in flavor. It can be used in many ways, such as spreading on bread, serving with roast lamb, or as a delicious topping for homemade vanilla ice cream. This is for a small batch recipe because currants can be both difficult to find and expensive unless you grow your own.

Second, budget friendly options are sour cherry jam or raspberry jam ( with or without seeds).

You may also spread apricot jam over logs but then the colour is not as inviting as with red currant or sour cherry.

As long as you stick to tangy jam, you get the best jamaretti cookies ever!

I skipped to drizzle glaze over logs since this almond paste cookie batch is great looking and tasty without anything else. Just perfect balance between sweet shortbread biscotti, tangy jam  and semi-bitter almond paste!

Jamaretti Cookies

Ingredients

  • Ingredients for shortbread cookies crust:
  • 1 ½ cup cake flour
  • 10 Tbsp unsalted butter, room temperature
  • 6 Tbsp white sugar
  • 1 large egg yolk
  • Pinch of salt
  • Ingredients for almond batter:
  • ½ cup almond paste, firmly packed
  • 2 Tbsp powdered sugar
  • 1 Tbsp unsalted butter,melted
  • 1 large egg white
  • ½ cup jam, red currant, for the glaze

Instructions

  1. On flat working surface, combine all the shortbread crust ingredients to get smooth dough.

  2. Wrap the dough into foil and leave to rest in the fridge for one hour.

  3. After one hour, unwrap the dough and quickly roll it on lightly floured surface. You should get 14 x 10 inches cookie dough.

  4. Preheat the oven to 180 C / 356 F.

  5. Cover sheet pan with parchment paper and leave close to rolled dough since you’ll have to transfer the ribbons on it for baking.

  6. Cut 5 ribbons ( logs ). They should be 14 inches long and 2 inches wide.

  7. Transfer them to the sheet pan and bake for 10 minutes.

  8. Take the logs out of the oven and leave them in the pan.

  9. Mix almond paste, powdered sugar, melted butter and egg white to get smooth cream. It should take 7 minutes.

  10. Fill the cake pipe with almond cream and garnish the long sides of all the logs. Although it may seem a little quantity, it is just enough for all the logs to garnish on both sides.

  11. Leave the logs to rest on room temperature for one hour.

  12. After 50 minutes of resting, preheat the oven to 220 C / 428 F.

  13. Bake the logs for 3 minutes. Almond paste should become golden.

  14. Take the dish out and cool the logs.

  15. While the logs are cooling, warm your jam so you spread it easy between almond paste edges. You don’t need to boil your jam. Just warm it up.It takes 2 minutes only.

  16. Once you spread it using pipe or teaspoon, leave at room temperature to cool and slice the cookies 1 inch wide. That way you get 70small bites to enjoy.
