Easy Chicken Florentine Casserole Kids Can Make

I created this Chicken Florentine Casserole because I wanted a super easy recipe the kids could make themselves. The tricky part was coming up with a dish my kids would WANT to make that was also good for them.

Thanks to some magic ingredients, this Chicken Florentine Casserole was the perfect solution.

This is a dish you can have on the table in half an hour so it’s perfect for busy weeknights. Plus, it’s so easy, the kids can make it themselves!

How to Make Chicken Florentine Casserole

The best thing about this recipe is that it’s so flexible! In the instructions below, I’ll share several ways you can substitute items based on what you have on hand.

What You Need:

  • 2 boneless, skinless chicken breasts OR rotisserie chicken
  • 1 10-oz package of frozen spinach, cooked and drained OR 12 to 16 ounces of fresh spinach
  • 1 1/2 cups Greek yogurt OR mayo and/or sour cream
  • Seasonings — we like onion powder, garlic powder, salt, and pepper
  • Moon Cheese — this is the magic ingredient that makes this dish amazing
  • Large ramekins — I use 7-ounce ramekins, if you use a different size, adjust the time (smaller = less time, larger = more time)

I discovered Moon Cheese several months ago and it immediately became one of my favorite snacks. You get all the satisfaction of a salty, crunchy snack from a treat that’s made with 100% cheese!

I don’t pretend to understand the magic that transforms delicious, savory cheese into a crispy, bite-sized snack. All I know is that it’s my favorite guilt-free snack since every serving is only 70 calories, has zero carbs and sugar, and provides a good dose of protein and calcium.

The reason this is my magic ingredient for this chicken florentine casserole is that it’s a healthy replacement for French fried onions, which is what my kids usually ask for to top their casseroles. Plus, since Moon Cheese provides the crunch AND a delicious cheese flavor to the dish, you can skip both the French fried onions and additional cheese, which my waistline appreciates.

Process

To make the casserole, you simply mix all the ingredients (except the Moon Cheese) together and spoon the mixture into each baking dish. Sprinkle Moon Cheese on top (all three are great, but I really like the Gouda flavor in this dish).

Bake in the oven for 20 minutes. All the ingredients are cooked so they really only need to bake long enough to be heated through.

That’s it! As soon as you remove the ramekins from the oven, the casseroles are ready to serve.

If you’re serving these to company (or just really like to impress your family), you can add a couple of fresh spinach leaves to the top for an added touch.

Ingredients
  

  • 2 boneless, skinless chicken breasts fully cooked and diced
  • 1 10-oz pkg frozen spinach cooked and drained
  • 1 1/2 cup Greek yogurt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pkg Moon Cheese

Instructions
 

  • Preheat oven to 375 degrees.
  • Combine chicken, spinach, Greek yogurt, and seasonings in a large bowl. Stir until mixed together.
  • Spoon mixture into four 7-inch ramekins. Top mixture with Moon Cheese.
  • Bake at 375 degrees for 20 minutes. Serve warm.

  1. Do you think this could be made in a 9×9 glass casserole dish, or do you think that ramekins are the only way to go? I was unable to find Moon Cheese, but I think Trader Joe’s Cheese Bites might be the same thing!

    • You can definitely make it in a casserole dish! If the contents don’t come up the side of the dish to about 2/3 full, you’ll want to adjust the time down a few minutes.
