  2. In a large bowl using a stand or hand mixer, whisk together your eggs, coconut oil, vanilla, and apple cider vinegar until well incorporated.
  3. Add in your almond flour, monk fruit and baking powder and continue to whisk until everything is well incorporated and smooth.
  4. Coat your waffle maker with non-stick spray and cook your waffles according to your waffle makers instructions.
  5. Gently remove your waffle with a fork from your waffle maker and repeat with the remaining batter. Top with anything you like and enjoy!

      • Hi there, just made a batch of these, I subbed butter for CO.
        I like the taste, but I didn’t not get the crispness I was hoping for. Do u think it was the butter? I know traditional Belgium recipes use melted butter. I did butter the grids slightly & cooked to specs of my black & decker flip Belgium maker.

        • I am so happy you like the taste! There a couple different factors that can cause the waffles to not crisp up. It could be because your waffle maker was not hot enough, stacking the waffles too soon after cooking (I like to place mine on a wire cooling rack), or over-working the batter.
