Storing and freezing

These Ricotta Gnocchi keep well. We can easily make them ahead and freeze them for later. This way, we can have them ready for any day of the week or special occasions.

Keep the cooked gnocchi in an airtight container in the fridge for up to 2 days. Before serving, reheat.

We can freeze the uncooked Ricotta Gnocchi too. Place them on a baking sheet in the freezer to freeze. Once completely frozen, transfer to a plastic bag. Keep in the freezer for up to 2 months. Cook them for three minutes longer while they are still frozen.

METHOD

    Combine ricotta, semolina flour, eggs, and Pecorino Romano cheese in a bowl. Knead into a smooth dough. Divide the dough into four parts. Shape each piece into a 2 cm / 1-inch thick rope. Cut into gnocchi. Optionally, use a fork to create a pattern in each gnocchi.

    Cook the ricotta gnocchi. Place a pot of salted water over high heat. Bring to a boil, then carefully add the gnocchi. Cook for 3 - 4 minutes or until the gnocchi is cooked and floats on top. Serve with your favorite sauce or main dish.
