INGREDIENTS YOU NEED

  • 1/4 cup unsalted butter room temperature
  • 1/2 cup plus 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups almond flour
  • 1 pinch salt

Instructions To Make Gluten Free Shortbread

  1. Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper, set aside.
  2. In a large mixing bowl, add your butter and sugar. Beat until creamy – it is easiest to use a stand or hand mixer.
  3. Add in your vanilla and eggs, one at a time until smooth. Gently fold in your almond flour and salt, mix until combined.
  4. Using a large cookie scoop, form 12-15 dough balls and place on your prepared baking sheet. Press each ball down into a cookie shape and create holes in the middle of your cookie with the prongs of a fork.
  5. Bake for 17-20 minutes, or until the edges are just starting to turn a golden brown. Remove from oven and allow to cool completely and enjoy!
