Adios Summer! As the temperature drops and the cold nights draw in, we are ready to embrace fall with all its glory. When it comes to fall weeknight dinners, we all need meals that are warm and hearty and at the same time can be whipped up without breaking a sweat.

This Sheet Pan Sausage, Apples and Roasted Vegetables is a healthy, vibrant meal that is all about cozy flavors and is guaranteed to make your dinner a breeze!
Juicy Chorizo sausages are roasted alongside seasonal apples, carrots, potatoes, brussel sprouts and red onion with lots of fresh herbs for a deliciously flavorful weeknight dinner!

I love the addition of the apples that lend a slightly sweet yet savory flavor to all of this roasted goodness.
There is no active work involved, you just have to chop the sausages and the veggies and toss everything together in the oven, letting it do all the hard work for you. Plus, everything gets cooked in a sheet pan making it super easy for cleanup.

  • I have used spicy Chorizo sausages in this recipe, but you can use any other variety like chicken or beef.
  • Make sure to pat your vegetables dry using a paper towel. If your veggies are not dry, they will produce moisture in the oven, resulting in steamed veggies instead of roasted ones.
  • This dish also makes excellent leftovers;you can reheat it easily by just popping it in the microwave or in the oven for a few minutes.

Ingredients:
  • 450 g Chorizo sausage, cut into chunks
  • 1 large red onion, cut into wedges
  • 200 gm Brussels sprouts, halved lengthwise
  • 2 large apples, cut into wedges
  • 200 gm carrots, cut into chunks
  • 200 g potatoes, cut into halves
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
Instructions:
  1. Preheat oven to 215 degrees Celsius. Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the carrots, Brussels sprouts, potatoes, onion and the sausages with olive oil, dried rosemary, dried oregano, salt, and pepper.
  3. Arrange all the vegetables and sausage on one even layer over the prepared baking sheet to ensure even cooking.
  4. Transfer the baking sheet to the oven and bake for 20 minutes until crisp tender.
  5. Add the apple wedges to the pan; broil until the apple pieces are tender and vegetables are slightly caramelized for 5 to 6 minutes.
  6. Remove the sheet pan from the oven and serve warm!
