How to Make Keto Chicken Enchilada Soup

Step 1: Saute the onions and peppers

Heat up olive oil in a large pot over medium-high heat. Add onions and bell pepper and saute for 2-3 minutes, until crisp and tender.

Add garlic powder, cumin, chili powder, and paprika; stir for 30 seconds until fragrant.

Step 3: Stir in the broth and tomatoes

Whisk in chicken bone broth and stir until well combined. Reduce heat to medium and add in low carb salsa and Rotel.

Next, stir in shredded cheddar cheese until melted and then simmer for about 10 minutes, stirring occasionally.

Add shredded chicken until well combined. Then, add salt and black pepper to taste and simmer for another 10 minutes.

  1. Any suggestions on what to use instead of heavy whipping cream? Hubby can’t have dairy and I would like to try this recipe as it looks super yummy.

    • I haven’t tried it, but I do see that they sell a dairy free heavy whipping cream and a plant based heavy whipping cream in the grocery stores, so maybe you could try one of those. I also found on Healthline, “To replicate the flavor and thickness of 1 cup (237 mL) of heavy cream, combine 2/3 cup (159 mL) of soy milk with 1/3 cup (79 mL) of olive oil.”

    Delicious soup, a favorite to make, even have shared it it’s been enjoyed. I do have one question, is the 20 carbs mentioned for the whole dish? I hope it’s divided at least by 4 servings.

I use an automatic nutrition calculating tool when I type up the recipe, so if you aren’t sure about the information, you can always look up the nutrition facts yourself or look on the labels on the packages you’re using.

    Really tasty! I sautéed the onions and peppers in my instant pot then threw everything else in (not HWC and cheese) and cooked for 12 minutes. Shredded the chicken then added the HWC and cheese. My husband told me 4 times how good it was, before he finished his second bowl!

    • A couple of examples of low carb salsa are Newman’s Own Mild Chunky Salsa and Herdez Salsa Verde. There are other low carb salsas – just check the nutrition facts on the label and make sure there’s no added sugar.

  7. I am looking for the net carbs and from what I see it is not a low carb soup. Would you kindly let me know what the net carbs are? Please and thank you. I can’t seem to find where you recalculated the carbs.

    • Hi Sharlene, I apologize because this is a limitation of the recipe card I use. Its nutrition calculator doesn’t include a low-carb salsa so anytime I have that in a recipe, it replaces it with one that completely transforms the nutrition data. That is why the stated carbs appear so high. If you’re using a low-carb salsa, you eliminate half the carbs in the recipe. The only other ingredient that individually contributes to the carb count is the onion which ends up adding just under 4g per serving.

  8. Please help! I just went out in the sleet to buy the ingredients for this delicious looking soup. I scrolled down to the nutritional info and saw it has 20 grams of carbs per serving. Could that be right? Is that the Keto version? I don’t see what ingredient could be jacking up the carb count. Please advise.

    • Hi Mel, my recipe card does the calculations for me (ideally, to eliminate human error). Unfortunately, as you can see, it’s imperfect. It sometimes doesn’t have specialty ingredients like low-carb salsa or chicken bone broth so it substitutes in close approximations for calculation purposes. On my end, it breaks it down by ingredient so the biggest carb offender in the calculations is the salsa (it calculates this at 8g/serving). It’s also showing the onion to contribute 4g/serving) and the can of rotel to add 3g/serving. Stick with a low-carb salsa. If that’s still too high for you, skip the onion and use fresh tomatoes instead of the rotel. I hope this helps!
