Can you believe that this amaranth roe recipe is vegan? Yes, they are 100% plantbased and an incredible delicious meal. It has the same texture as caviar or roe and an unique taste, which combines the fishy, earthy and nutty flavors together.

It’s quite simple to cook amaranth. It’s best to soak it for at least 30 minutes to overnight in a pot, if you have the time. Because this way it gets easier to cook and the nutrients will be easier digested. Then I simply add it on the heat with a pinch of salt and cook them until there is no much liquid left. Then just mix the cooked grain with vegan mayo and lemon juice to get the delicious vegan roe.

What is amaranth?

Amaranth is a whole grain like quinoa. It is naturally gluten free and considered a pseudocereal. This means it’s similar to a cereal, but it doesn’t belong the same botanical family like other cereals, like wheat or rice.. Amaranth is in the same plant family with quinoa, spinach or beets. It was a staple food of the Aztecs. Now you can find it in heathy food stores.

Amaranth is less known as quinoa, but it’s more nutritive. Moreover it’s a complete protein, meaning it has all the 9 essential amino acids.

Ingredients

1 cup amaranth

2 1/2 cups water

2 tablespoons vegan mayo

1 red onion

juice of 1/2 lemon

salt to taste

Instructions

Step 1: soak the amaranth in the 2 1/2 cups water (optional)

Step 2: cook the amaranth, water and a bit of salt for approx. 20 minutes or until the liquid is absorbed

Step 3: add the vegan mayo, lemon juice, the chopped red onion and perhaps more salt to taste

Step 4: serve them on bread and enjoy
