I love waking up to warm muffins in the mornings. They are a great make-ahead breakfast for rushed mornings when you don't have the time to prepare something before heading out of the door. That being said, I am not talking about overly sweet muffins. I am talking about muffins that are filled with wholesome ingredients that will help meet your health goals and keep you fuelled until lunch.

The different varieties of fresh, crisp seasonal apples available this time of the year inspired me to make these Apple Cinnamon Muffins.
Deliciously soft, moist, fluffy muffins that are loaded with fresh apples and warm spices, these are a Fall favorite!
The combination of apples and cinnamon is an iconic fall staple and will leave your kitchen smelling warm, fragrant, and cozy. Though these are perfect year round they taste best slathered with some butter and with a cup of coffee on cool fall mornings.

Do you need to peel the apples?

There’s no need to peel the apples for this recipe, as the skin will become tender in the oven. However, you can peel them if you prefer doing so.

How long do the Muffins last?

The Apple Cinnamon Muffins will last for up to 3 days at room temperature in an airtight container. In the fridge, they will last up to a week. And, when you want to have them, simply warm the muffins in the microwave for a minute.

Ingredients:
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups shredded apples
  • 2 large eggs, at room temperature
  • 3/4 cup smooth unsweetened applesauce
  • 1/2 cup honey
  • 1/3 cup vegetable oil
  • 1 tablespoon pure vanilla extract
  • 3/4 cup of chopped walnuts
Instructions:
  1. Preheat oven to 215°C. Line the muffin pan with cupcake liners and set aside.
  2. In a large bowl, whisk the whole wheat flour, baking powder, baking soda, cinnamon powder, nutmeg and salt together until combined. Set aside.
  3. In another bowl, whisk the eggs, applesauce, oil, honey and vanilla together until combined.
  4. Pour the wet ingredients into the dry ingredients, mix together and then add the shredded apple and chopped walnuts.
  5. Using a spatula fold everything together gently just until combined. The batter will be very thick.
  6. Fill all the cupcake liners with the batter all the way to the top. Bake for 5 minutes at 215°C, then, keeping the muffins in the oven, reduce the oven temperature to 180°C. Bake for an additional 15–18 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool for 5 minutes in the muffin pan, and then transfer to a wire rack to continue cooling.
  8. Enjoy with a cup of hot coffee!
