Fire up your grill and put a few chicken tenderloins on the grill. Bring your grill up to 400 degrees F and place 5 tenderloins on the grill grates over direct heat and lower the cover. Grill for 5 minutes and then flip. Grill for another 5 minutes until they reach a temp of 165 degrees F.

Chopped Cucumbers, Fresh Cherry Tomatoes, Peppadew Peppers and Grilled Chicken mixed with tangy dill dressing to make for a refreshing healthy salad.

Ingredients

  • 1 Medium Size Cucumber chopped
  • 5 small Peppadew peppers chopped
  • 5 cherry tomatoes
  • 5 chicken tenders
  • For dressing
  • 2 tablespoons Mayonnaise
  • 2 tablespoons yogurt
  • small handful chopped fresh dill
  • pinch of salt
  • pinch of pepper
  • tablespoon of rice wine vinegar

Instructions

Chop cucumber into small 1/2 inch pieces and combine with dressing

Heat gas grill to 450 degrees

Place salted chicken tenders on grill.

Flip after 5 minutes and continue to grill until tenders reach temp of 170 degrees.

Place cucumber salad mixture on plate and then add peppers and tomatoes.

Chop tenders and place on top of cucumber salad.

Notes

Look for medium sized cucumbers for this recipe.
