What is the Difference Between Wild Caught and Farm Raised Salmon?

Salmon is one of the healthiest fish due to its protein and omega-3 content, making many salmon recipes a go-to for health aficionados (a-fish-ionados?). However, farmed salmon and wild-caught salmon have several health differences.

While each have their pros and cons, the differences in health statistics, such as contaminants and omega-3 levels, aren’t large enough to cause much concern. However, it should be noted that while farmed salmon is usually larger due to the proteins the fish are fed, the antibiotics that are fed to salmon in fish farms can pose some health problems.

Both can also contain mercury- a common concern when it comes to seafood- but because salmon are smaller fish than swordfish or tuna, the levels they may contain are very low. Wild caught salmon is more expensive but lacks the antibiotics that farmed salmon may carry. If you decide to purchase wild-caught salmon, make sure to do so sustainably.

1. Prep and Cook the Salmon Fillets

First, preheat the oven and spray a 9X13 baking sheet with cooking spray or olive oil, or line with parchment paper. Place salmon in the pan, making sure each piece of salmon is pat-dry. Each piece of fish should be salmon skin side down towards the bottom of the pan.

2. Stir and Reduce the Sauce

Mix together the maple syrup, brown sugar, soy sauce, Dijon mustard, and pepper. Pour the maple syrup mixture over the top of the salmon. Then, place broccoli and cooked rice in the pan, cover with foil, and bake the salmon in the preheated oven, watching the time to make sure it doesn’t overcook. As soon as the salmon is done, remove it from the oven.. Serve with almonds and green onion.

Ingredients

  • 2 Pounds Salmon Fillets
  • Cup Brown Sugar
  • Cup Maple Syrup
  • 1 ½ Tablespoon Reduced-Sodium Soy Sauce
  • ½ Tablespoon Dijon Mustard
  • Teaspoon Pepper
  • Almonds, Chopped or Sliced
  • Green Onion, Chopped
  •  Cooked Rice and Broccoli, Optional

Instructions

  • Spray a 9×13 Pan with cooking spray. Place Salmon into the pan.
  • Mix together Brown Sugar, Maple Syrup, Soy Sauce, Dijon Mustard and Pepper
  • Pour mixture over Salmon
  • Now place fresh Broccoli on one side of Salmon and cooked Rice on the other.
  • Cover with foil and cook in a 400 degree oven. Timing will depend on how thick your Salmon is. Thick fillets should cook for about 15-20 min. Less for thinner. Check after 10 minutes.
  • Add Almonds and Green Onions on top if you like.
