Healthy Carrot Cake Bliss Balls

Healthy, bite sized carrot cake bliss balls made gluten free. This simply recipe will surprise you with just how easy it is to make using wholesome ingredients that are all readily available from the supermarket.

Sweetened with maple syrup and stevia these bliss balls are a great low carb, refined sugar free snack option that do not require any baking. Simply gather your ingredients, mix and roll!

Carrot cake is probably one of my least favourite cakes. Don’t get me wrong, I have tasted some beautiful carrot cakes but I have also had some shockers. The thing that always gets me over the line is cream cheese frosting, which is probably my favourite type of frosting in the whole entire world. I’m not exactly sure why I dislike carrot cake but I think it’s because it typically has the same amount of sugar and calories as a regular cake but tastes not as good, yep that is definitely it!

So you might be wondering, why make carrot cake bliss balls if you don’t love carrot cake? Well, I was inspired to make this recipe because it IS actually healthy and consuming raw carrots actually has a lot of healthy benefits as they are loaded with antioxidants. So enjoy this recipe knowing that each bite is good for your body and delicious for your taste buds.

Are these bliss balls vegan?

You can easily make these bliss balls vegan, in fact the base recipe is vegan friendly, just omit the collagen powder.

You cannot substitute collagen powder for vegan protein powder. The two powders have VERY different effects in baking and recipes. Vegan protein powder is extremely absorbent whereas collagen is not absorbent at all and practically dissolves into any recipe and will virtually go unnoticed.

Ingredients for this Recipe

  • Grated carrot. Be sure to grate your carrots finely. No one wants thick chunks of carrot in their carrot cake bliss balls LOL
  • Almond meal
  • Desiccated coconut
  • Coconut flour
  • Collagen powder (optional). I always use a bovine collagen powder as I prefer it to marine collagen.
  • Stevia
  • Cinnamon
  • All-spice (optional)
  • Coconut oil
  • Maple syrup
  • Vanilla extract
  • White chocolate and walnut pieces for decorating. I used a sugar free white chocolate for the coating.

How to make Carrot Cake Bliss Balls

  • Combine almond meal, coconut, coconut flour, collagen, stevia and spices in a food processor until well combined.
  • Add the grated carrots, maple syrup, coconut oil and vanilla extract and mix again.
  • Transfer the batter into a mixing bowl and use your hands or a cookie scoop to form 12 balls. 
  • Roll each ball to desired size and shape and placed on a lined tray or plate.
  • Optional: Decorate the healthy carrot cake bliss balls with melted white chocolate and walnut pieces.
  • Transfer to the fridge to set until firm.

How to Store Bliss Balls

Usually, the motivation for making a batch of bliss balls is to have a healthy home made snack on hand for when you are feeling a little hungry. Or perhaps you like to finish your meal with something slightly sweet but knowing that what you are eating is actually fueling your body (rather than hindering it ie sugar). This means you will need to store the carrot cake bliss balls accordingly.

I recommend storing these bliss balls inside and airtight container in the fridge. I have found they do not keep well at room temperature for very long as they start to get very soft. Stored in the fridge your carrot cake bliss balls should last up to one week.

  • Roll each ball to desired size and shape and placed on a lined tray or plate. Follow instructions to decorate or to transfer to the fridge to set until firm. 

Topping

  • Place carrot cake bliss balls in the freezer for 20 minutes.
  • Melt white chocolate with coconut oil and carefully dip each bliss ball in the mixture.
  • Top with walnut pieces and place in the fridge to set.

Notes

Use any type of chocolate or nut to decorate the carrot cake bliss balls.
Store in the fridge for up to five days.
