Mom’s Banana Bread

I might be biased but my Mom’s Easy Banana Bread is probably one of my favorites. There are so many ways to make banana bread but this one brings me back to my childhood. Which is probably why I like it so much.

I will admit that I made one small change to her original recipe. This small change just made it a little moister. But please don’t tell her! You know how moms can get sometimes.

The best bananas for banana bread are when they are overripe, not yellow but black. Or they’re at least streaked with black/brown. The darker the better.

If you can’t find overripe bananas, you can speed up the process by putting the bananas in a paper bag along with an apple and loosely folding down the top. The bananas should ripen in just a day or two using this method.

Ripe Bananas

On average, 1 banana will yield about 1/2 cup mashed. So you will need approximately 4 ripe bananas for this recipe. For this ingredient, it doesn’t need to be super exact but 2 cups mashed yields the best flavor in my opinion

Instead of making a loaf, you can make muffins with this banana bread batter. They will most likely take less time to cook so if you are going to make muffins make sure you keep an eye on them and test with a toothpick early.

The easiest way to mash ripe bananas is with a fork or even better a potato masher. It’s much quicker if you use a potato masher.

You will need the following ingredients to make this Mom’s Banana Bread recipe (see recipe card for quantities): All Purpose Flour, Baking Soda, Baking Powder, Salt, Milk, Ground Cinnamon, Vanilla Extract, Greek Yogurt, Butter, Light Brown Sugar, Eggs and Bananas.

  1. Preheat the oven to 350°F.
  2. In a mixing bowl sift to combine Flour, Baking Soda, Baking Powder, and Salt.
  3. In a separate large bowl cream together butter and brown sugar. Stir in eggs one at a time and beat until incorporated.
  4. In a bowl, mash bananas, milk, cinnamon, vanilla, and yogurt. Add banana mixture to butter mixture and mix until combined. Slowly add flour mixture. Stir just to moisten.
  5. Pour into greased loaf pan.
  6. Bake for 50 to 60 minutes or until a toothpick comes out clean. Let bread cool in the pan for 10 minutes, then put on a wire rack until cool.

Ingredients
 

  • 2 Cups All Purpose Flour
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • ½ Tsp Salt
  • ½ Cup Unsalted Butter
  • ¾ Cup Light Brown Sugar
  • 2 Eggs, lightly beaten
  • 2 Cups Ripe Bananas, mashed
  • 1 Tbsp Milk
  • 1 Tsp Ground Cinnamon

    I love this banana bread and loved making it. Was easy to make. My family had a piece as their breakfast. I made a double batch and froze one loaf. A great addition when you have unexpected company. Loved it.
