How to store these Brownies?

These brownies can be stored in an air-tight container in the fridge for up to 3 days.

I’ve had this brownie recipe on repeat since the first time I tried it and they turn out perfect every time. Here are few tips for making moist muffins.

Tips for making the Best Brownies:
  • Some recipes call for squeezing out the water from the zucchinis. However, you do not need to squeeze out the water for this recipe. The water in the zucchinis will make the brownies extra moist.
  • Keep a check on the brownies while they are baking . Over baking them will make them dry. Hence, I recommend doing the toothpick test. In the toothpick test, insert a toothpick into the center. It should come out as slightly wet. If it comes out dry, it means you’ve probably over-baked the brownie!

Ingredients:
  • 1 cup all purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ⅔ cup unrefined brown sugar
  • ¼ cup olive oil
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini
Instructions:
  1. Preheat oven to 175 degrees Celsius.
  2. Line a 9x13 inch baking pan with parchment paper and grease with cooking oil or spray.
  3. In a large bowl, mix the flour, cocoa powder, salt and the baking soda and mix everything together.
  4. In another bowl, add in sugar, oil and vanilla extract. Using a spatula, mix everything well.
  5. Add the wet ingredients to the dry ingredients and mix until everything is well combined with no huge lumps.
  6. Finally add in the grated zucchini. Continue mixing until you get a thick wet batter.
  7. Pour the mixture into the prepared baking pan.
  8. Bake in the pre-heated oven at the middle rack for 20 minutes or until a toothpick inserted in the center comes out slightly wet. If it comes out dry, it means that you have over baked it.
  9. Remove from the oven and allow them to cool down completely before slicing into pieces and drizzle some melted dark chocolate.
  10. You can also serve the warm brownies with a scoop of vanilla icecream .
